The list is tight and deliberate, leaning hard into California sparkling, which is exactly the right call when you're sitting in a 19th-century hotel garden with a cheese board in front of you.
The list clocks in somewhere between 40 and 80 bottles, which sounds modest until you notice the curation. California sparkling is the clear obsession — Schramsberg, Iron Horse, Roederer Estate, and Domaine Carneros anchor a strong domestic bubbles section that would embarrass most restaurants in cities three times the size. They round things out with Napa heavyweights like Stag's Leap Cabernet Sauvignon and Spottswoode Sauvignon Blanc, which read more like trophy picks than everyday pours. The gap is real wine country depth — don't come expecting obscure Sonoma Pinot or Rhône varieties.

Anderson Valley gives Roederer Estate a cool-climate backbone that most Napa visitors won't be expecting. It's the most food-friendly pour on the sparkling list and typically the most accessible price point among the bubbles — order it instead of whatever Champagne import they've tacked on at a tourist markup.
Iron Horse Brut, Sonoma County Green Valley
Green Valley is one of California's coldest sparkling wine appellations and Iron Horse is a benchmark producer, but most guests here will walk right past it toward a recognizable French label. That's their loss. The acidity and structure in this wine make it one of the more serious pours on the list.
Stag's Leap Wine Cellars Cabernet Sauvignon, Napa Valley
A legitimately great wine, but this is a sparkling and light-bites bar — not a steakhouse. Stag's Leap Cab at hotel-bar markups in a setting with no real red-wine-appropriate food to anchor it feels like an expensive mismatch. You're paying a significant premium for a bottle that deserves a better context.
Schramsberg Blanc de Blancs, North Coast + Cheese and Charcuterie Board
Schramsberg's Blanc de Blancs is all bright citrus and fine bubbles — it cuts through the fat in aged cheeses and salumi without competing with them. It's the classic move in this garden setting and it works every time.
