WSW The Steakhouse at Hilo Hawaiian Hotel

Twenty-six labels isn't a lot to work with, but WSW keeps its ambitions appropriately focused — this is a hotel steakhouse in Hilo, not a Napa tasting room, and the list knows it. Prices top out at $89 and bottom out at $37 a bottle, which for a restaurant attached to a hotel on the Big Island is genuinely refreshing. The layout skews heavily West Coast, which tracks when you're looking out at Hilo Bay.

The list is essentially a California greatest-hits package with a few Pacific Northwest ringers thrown in: La Crema, Siduri, Calera, WillaKenzie, Hartford Court — reliable producers that serious drinkers recognize without being so obscure that the table next to you would need a cheat sheet. The Pinot Noir section is the strongest corner, with four distinct expressions ranging from the approachable La Crema ($49) up to the more terroir-driven WillaKenzie ($69). Whites lean Chardonnay-heavy, which makes sense given the clientele, though the A to Z Riesling and Koha Sauvignon Blanc at least show someone tried to break up the oak parade. The red side drops off after Pinot — a single Côte du Rhône, a Zinfandel, a Malbec, and two Cabs is thin coverage for a steakhouse, but the prices are honest enough that it's hard to stay mad.

Fifteen pours by the glass is a generous count for a 26-bottle list — basically everything is available by the pour, which is exactly what you want at a hotel restaurant where people are often dining solo or on vacation schedules. Glass prices run $10–$16, which is fair for Hawaii without being a steal. The Benvolio Prosecco at $11 a glass is a smart entry point if you're starting the night right.
