You're in a small town outside State College, Pennsylvania — not exactly a destination for serious wine — and then the list lands on your table. Eighty-plus bottles, Pierre Peters Champagne, Domaine Tempier Bandol, Ridge Estate Cab. This isn't what we expected, and we mean that in the best possible way.
The list punches well above its zip code. France anchors the program — Champagne, Burgundy, Rhône, Provence, and Bordeaux all get real representation, not just token gestures. Italy shows up properly too: Felsina Chianti Classico, Vajra Barolo, Elena Walch Alto Adige. The gaps are on the domestic side — Ridge is a strong California pick but a single Santa Cruz Mountains Cab doesn't exactly flesh out the New World story. Still, the Old World depth here would hold its own in a much bigger market.
Twenty-two by-the-glass options is genuinely impressive for a restaurant of this size and setting. The range spans from Dr. Loosen Red Slate Riesling and Hirsch Grüner Veltliner to Pazo Senorans Albariño and Felsina Chianti Classico — these aren't filler pours. Prices run $13–$22 a glass, which feels fair given what's being poured.
Grüner Veltliner, Hirsch 'Hirschvergnügen' 2023 (Kamptal, Austria) — $13–$22/glass
Hirsch makes some of the most serious Grüner in Austria, and 'Hirschvergnügen' is the kind of bottle that overperforms at every price point. Finding it available by the glass anywhere outside a major city wine bar is a small miracle — order it.
Champagne, Bereche et Fils 'Brut Réserve' NV
Most people at a neighborhood American restaurant are going to scroll past the Champagne section entirely, which means the table next to you gets to enjoy Bereche — a small, grower-producer house making some of the most interesting non-vintage Champagne in the game — while you're stuck with whatever you defaulted to. Don't be that table.
Bordeaux, Château Haut-Surget
Without a vintage or price listed in the data we have, Haut-Surget sits as the list's most anonymous entry — a Bordeaux name that doesn't inspire the same confidence as what surrounds it. With Vajra Barolo and Felsina Chianti Classico on the same list, there are better places to put your red wine dollars.
Chianti Classico, Felsina 'Berardenga' 2021 + Butter-basted steak or roasted meat entrée
Felsina Berardenga is textbook Chianti Classico — bright Sangiovese acidity, firm tannins, earthy depth. It's built for red meat with fat, and a restaurant called The Butter Churn presumably knows its way around a pan sauce. This is the easy call.
The Bottom Line
The Butter Churn is doing something genuinely surprising for central Pennsylvania — a thoughtful, well-sourced wine list that goes beyond the expected and rewards the curious drinker. If you're anywhere near State College and care about what's in your glass, this deserves a visit.

The Field's wine list is functional at best and forgettable at worst — it exists to serve people who want something other than a beer, not to make anyone excited about what's in their glass. Order the Hawstone Hollow out of regional solidarity, grab the Tilia Malbec with your burger, and let the cocktail menu do the heavy lifting the rest of the night.
