You walk into what looks like a cocktail bar and the wine list stops you cold — ten bottles, all of them intentional. No Kendall-Jackson, no Josh, no filler. Someone here actually cares.
For a small-plates spot in downtown Rockford, this list punches well above its weight class. France leads the charge with a Mary Taylor Apremont from Savoie, a Domaine Passy Chablis, a Jean Max Roger Sancerre, and a Charles Gonnet Gamay Rosé — that's four credible French picks alone. Italy gets real representation with the Barone di Villagrande Etna Rosso, not some generic Chianti, and Spain shows up with a proper Cava. The gaps are minor: reds are thin beyond the Etna Rosso and a couple of California/Oregon options, and there's nothing for the Barolo crowd. But for the format — cocktail bar, small plates, twelve-top max — this is exactly the right size list done correctly.
The full list is available by the glass, which is either a confident flex or a logistical gamble on turnover — either way, we respect it. Ten options spanning bubbles, whites, rosé, and reds means you're not stuck ordering Chardonnay because it's the only white. Prices run $11 to $23, which feels honest for the quality level on offer.
Marques de Cáceres Cava Brut NV — $11/glass, $25/bottle
Marques de Cáceres makes a reliable, clean Cava and at $25 a bottle this is the easy yes for a table that wants bubbles without a big commitment. Solid producer, fair price, great way to start.
Mary Taylor Apremont 2023
Most people in Rockford aren't ordering Savoie whites. Most people anywhere aren't. That's a shame, because Apremont — made from Jacquère grapes in the French Alps — is crisp, mineral, and genuinely interesting. Mary Taylor imports small-production stuff that rarely shows up on lists this far from a major metro. Order it before anyone else figures out it's on here.
Jean Max Roger 'Les Cailotes' Sancerre 2024
Jean Max Roger makes good Sancerre — no argument there. But $85 a bottle ($23 a glass) is a tough ask when you can find this wine at retail for meaningfully less. The markup isn't egregious, but Sancerre at this price point competes with the whole list, and the Apremont or Chablis will give you similar Loire-adjacent satisfaction for a lot less.
Barone di Villagrande Etna Rosso 2023 + Charcuterie
Nerello Mascalese from the slopes of Etna is all volcanic minerality and bright red fruit with real acid — exactly what you want cutting through cured meats and aged cheese. The wine has enough structure to stand up to a salty, fatty spread without overwhelming anything on the board.
🎲 The Bottom Line
SALT. is doing something genuinely surprising for its market — a tight, Old World-leaning wine list in a cocktail bar where most places would just slap on a Meiomi and call it a day. If you're in Rockford and you care about what's in your glass, this is your spot.

Ciao Bella isn't going to blow any minds with its wine program, but it's honest, fairly priced, and the Wine Down Wednesday deal on bottles over $40 is legitimately one of the better weekly wine promos in the area. Show up on a Wednesday, order something Italian, and you'll leave happy.
