What's here is deliberate, and the pricing is honest enough that you won't feel like the hotel is running a surcharge on your evening.
The list leans into the Pacific Northwest identity without being parochial about it. You get local heroes like the Argyle Special Select Brut Rosé 2021 and the Degustas Milieu Pinot Noir 2022 sitting alongside imports like the Terlano Pinot Bianco from Alto Adige and the Donatella Cinelli Colombini Chianti Superiore — which shows some range for a 13-bottle list. The Coeur De Terra Syrah 2019 and Walla Walla Vintners Cabernet Sauvignon 2022 give Eastern Washington a seat at the table, which is a smart move.
