Wingman Metrics
Walk into a hotel bar and expect the worst — a laminated card with a Kendall-Jackson Chard and a Meiomi Pinot. BBellevue doesn't do that. The list is compact at 52 labels, but whoever put it together was paying attention: there's a pét-nat, a Grüner Veltliner, a Langhe Nebbiolo, and a DeLille Roussanne sharing space with the obligatory Veuve. That's not an accident.
The list skews Pacific Northwest with purpose — Illahe Viognier, DeLille Cellars Roussanne, Januik Red Blend, and Lange Three Hills Chardonnay all show up, giving the list a regional identity that most hotel bars don't bother to build. Beyond the local anchors, there's genuine range: a Spanish Cava, a Crémant de Limoux rosé, a Bordeaux from Hauts de Lagarde, and Corino Renato's Langhe Nebbiolo for anyone tired of ordering Cabernet. The gaps are real — no red Burgundy, no Barolo, nothing from the Southern Hemisphere — but for a 52-label hotel list, the curation is honest and considered. The Cristal at $550 is clearly there to anchor the menu psychologically, not because anyone's ordering it with their lobby charcuterie.
Fifteen options by the glass is generous for this format, ranging from $8.50 to $24 — and the program earns credit for including the Naken Orange Pét-Nat as a pour option, which is a genuinely adventurous call for a Hyatt lobby. The range hits sparkling, orange, rosé, white, and red without doubling up needlessly. The floor-to-ceiling of glass prices is wide enough that you're not forced into a $22 Chardonnay if you just want something easy.
Corino Renato Langhe Nebbiolo 2021 — $44
Forty-four dollars for a bottle of Langhe Nebbiolo from Corino Renato — one of Barolo country's more respected family producers — is genuinely reasonable for a hotel bar. This is a wine that drinks well above its station and is almost certainly the most interesting red on the list at the lowest price point.
Naken Orange Pét-Nat 2021
Most people ordering at a hotel bar are reaching for Champagne or a safe white. The Naken Orange Pét-Nat is sitting there for $48 a bottle, and nine out of ten tables will skip right past it. That's a mistake. A skin-contact sparkling wine on a hotel list is genuinely unusual — order it before whoever curated this gets replaced by someone more cautious.
Veuve Clicquot
At $125 a bottle, Veuve is doing exactly what it always does in hotel bars: trading on its orange label recognition to justify a markup that doesn't hold up. The Flama d'Or Cava at $44 or the Laurens Crémant de Limoux at $48 will do more interesting work for a fraction of the price. Order Veuve if the occasion demands a recognizable name on the table; skip it if you actually want to drink well.
DeLille Cellars Roussanne 2023 + Charcuterie Board
DeLille's Roussanne is a serious white — textured, slightly oxidative, with enough weight to stand up to cured meats and aged cheese without getting steamrolled. It's the kind of wine that makes a bar snack feel like a real course.
The Bottom Line
BBellevue is the rare hotel bar that makes a real effort with wine, and it shows in the curation — Pacific Northwest producers, an orange pét-nat, and a Nebbiolo that shouldn't be this affordable. Markups are steep in places and the list won't change your life, but for a lobby bar in Bellevue, this is genuinely worth a stop.

Mercato Stellina is a pizza spot that accidentally built a wine list worth talking about — the Italian backbone is legit, the Washington State picks are well-chosen, and the pricing is honest. If you're expecting a deep white or sparkling program you'll be disappointed, but for a Nebbiolo or a Syrah with your Neapolitan, this place delivers.
