At 136 labels, it's not a small list, but size alone doesn't mean ambition. This is a list built for people who already know what they want to order before they sit down.
The whites lean heavily on California Chardonnay — Rombauer, Sonoma-Cutrer, and Bezel (Cakebread's accessible line) are all present and accounted for, which tells you exactly who STK is courting. Sauvignon Blanc gets three solid options in Kim Crawford, Cloudy Bay, and Twomey by Silver Oak, so at least there's a range of price points in that category. The rosé section is pure Provence orthodoxy with Whispering Angel and Miraval — crowd-pleasing, Instagram-friendly, and priced accordingly.
