You're in Billings, Montana — not exactly the first city that comes to mind when you think serious wine programs. Then you open the list and there's a Riccitelli Pet Nat Rosé from Argentina sitting next to a Pierre-Henri Gadais Muscadet and a Hans Wirsching Scheurebe, and you start to wonder who's running this thing. Someone here is paying attention.
Sixty-one labels is a real list for any city, but for a New American spot in south-central Montana it's almost absurd — in the best way. The white wine section alone has more range than most coastal bistros: a Kermit Lynch-imported Tintero Bianco blend, a C.H. Berres Mosel Riesling, a Grosgrain Albariño, a Gadais Muscadet, and a Shine Gewürztraminer that suggests someone actually thought about aromatic whites. The sparkling section punches above its weight too, with St. Hilaire Brut at $39 and Charles Heidsieck Champagne for $128 — a fair ask for a prestige cuvée. Gaps in the red section are harder to assess with the data we have, but the whites and bubbles alone justify the visit.
Fifteen pours by the glass is generous, and with prices topping out around $15 a pour, this isn't trying to gouge anyone. The range we can see suggests the BTG program mirrors the adventurousness of the bottle list — you're unlikely to be stuck choosing between a generic Pinot Grigio and a butter bomb Chardonnay. That alone puts Walkers ahead of most of its Montana neighbors.
St. Hilaire Brut 2023 — $39
St. Hilaire is a Blanquette de Limoux producer with serious pedigree — this is méthode traditionnelle sparkling wine at a price that undercuts most Prosecco on restaurant lists. At $39 a bottle, it's the move if you want bubbles without paying Champagne prices.
Hans Wirsching Scheurebe 2021
Scheurebe is the grape nobody orders and everyone should. This Franken producer makes a version that's part grapefruit, part white peach, part mystery — it's one of Germany's most underrated white grapes and at $43 it's a genuine find. Most tables will walk right past it for the Sancerre. Don't be most tables.
Joseph Mellot Sancerre 2023
At $65, it's not egregiously priced, but Joseph Mellot is a large négociant operation — reliable, clean, and thoroughly unremarkable. For the same $65 you could build toward something far more interesting on this list. Sancerre is the safe order; this list rewards the curious.
Kermit Lynch / Tintero Bianco Blend + Fresh seafood or lighter New American plates
The Tintero Bianco is a low-intervention blend from Piedmont's Moscato country — textured, slightly savory, and built for food. It's the kind of wine that makes anything light and bright on the plate taste better. If Walkers has a fish dish or a vegetable-forward starter, this is the pour.
The Bottom Line
Walkers Grill is doing something genuinely rare — building a thoughtful, eclectic wine list in a market that would forgive them for not trying. If you're passing through Billings or happen to live there, this is worth your dinner reservation and your second glass.

Jaker's is a perfectly fine place to drink wine with a steak in Billings — it's not trying to be anything more than that, and mostly it succeeds. If you're expecting discovery or value, temper your expectations; if you just want a solid Cab with your prime rib, you'll leave satisfied.
