You open the wine list at a hotel restaurant in Billings, Montana, and expect the usual suspects — a Kendall-Jackson Chardonnay, maybe a Meiomi Pinot. Instead, TEN has gone full dessert and fortified wine specialist, and the audacity alone is worth acknowledging. Twelve labels, zero apology.
This is not a conventional wine list. TEN has essentially curated a dessert wine and fortified wine program — Sauternes, Port, Madeira, Icewine, Vin Santo, Brachetto — and committed to it completely. The range spans Bordeaux's sweet giants (including a $898 bottle of Château D'Yquem), Italian curiosities like Castellare di Castellina's Vin Santo and Anselmi's Garganega-based 'I Capitelli,' and a solid Port progression from Fonseca Ruby up through Sandeman's 40-Year Tawny. There's no red, no white table wine, no bubbles — this list exists entirely in the after-dinner universe, which is either brilliant niche programming or a hard stop for guests who wanted a glass of Syrah with dinner. The inclusion of Carpano Antica Formula as a pourable option adds a bittersweet, herbal counterpoint that rounds out the fortified category nicely.
Six glass pours anchor the experience: Carpano Antica at $8/glass, Fonseca Ruby Port at $12/glass, Sandeman Rainwater Madeira at $12/glass, Graham's 10-Year Tawny at $15/glass, Sandeman 20-Year Tawny at $22/glass, and the Sandeman 40-Year Tawny at $55/glass.
