The Tavern's wine list feels like it was built to impress parents' weekend — familiar names, big California reds, nothing that's going to make anyone uncomfortable. It's a 88-label list that reads confident on paper but leans hard on crowd-pleasing Napa and Paso bottles that most guests already recognize from the grocery store shelf.
The list is dominated by domestic California producers, with Napa and Paso Robles doing the heavy lifting on the red side. You'll find names like PlumpJack's Adaptation and Austin Hope, which are solid wines in their own right but not exactly pushing any envelopes. There's no meaningful European presence to speak of, no interesting domestic outliers from Oregon or Washington to balance things out, and the small-format 375ml options suggest they're thinking about solo diners and bottle-shy tables rather than serious wine exploration. The range tops out around $300 but the sweet spot for most tables will land in the $40–$120 zone.
The by-the-glass program runs 10–18 options depending on the season, which is a reasonable spread for a restaurant of this size. We'd expect the pours to track the same California-forward theme as the bottle list — familiar varietals, no surprises. Rotation doesn't appear to be a strong suit here, so don't count on anything exciting changing week to week.

At 100% markup it's not a steal, but between the two marquee Cabs on this list, PlumpJack's second label at least has the pedigree to justify the ask — better winery story, better aging potential, and it drinks closer to its price than the competition.

Most tables will grab whatever Cab they recognize first — which means this one occasionally gets passed over in favor of the Austin Hope. That's a mistake. Adaptation is the quieter option with more nuance behind it, and on a list this narrow, nuance is worth ordering.

At $120 on the restaurant list against a $55 retail price, you're paying a 118% markup for a bottle that's widely available and frequently discounted at Total Wine. It's a fine wine — just not a fine deal.

A structured Napa Cab with the fat and char of a proper prime rib is a dead-simple equation — the wine's tannins cut through the richness, the beef softens the fruit, and everybody at the table looks like they know what they're doing.

The Tavern is a reliable downtown anchor for a classic steak-and-red-wine night in State College, but don't come expecting bargains or discovery — this list is built for comfort, not adventure. Order the PlumpJack, get the prime rib, and enjoy the room.
