You don't expect to walk into Downtown Georgetown, Texas and find a wine program sitting on 2,100 bottles. But here we are. Sovian announced itself as a European steakhouse-meets-wine bar, and the ambition on the list backs that claim up immediately.
The list casts a genuinely wide net — Provence rosé, Spanish Tempranillo, Argentine Malbec, and California Cabernet all sharing shelf space with a reported cellar of over 2,100 bottles. That's not a restaurant wine list, that's a commitment. The European backbone leans toward France and Spain, which gives the program a sense of identity rather than just breadth for breadth's sake. The gap is in specificity — beyond a handful of named producers, the deeper cuts of the cellar remain something of a mystery until you're sitting down and asking questions.
With 20 to 35 options by the glass running $12 to $20, there's real range here for a mid-week dinner where you don't want to commit to a bottle. The AIX Rosé from Provence is a reliable anchor on the glass list — crowd-pleasing without being lazy. We'd love to see more rotation to pull from that deep cellar, but the current spread is still well above average for this zip code.

AIX is a legitimate Provence producer — not a grocery store pink — and landing it in the $12-$20 glass range at a Texas bistro is a fair deal. Crisp, dry, and honest about what it is.
Spanish Tempranillo
Most tables in a place like this are reaching for the California Cab. The Tempranillo gets overlooked, but it's the smarter play — earthy, food-friendly, and almost always carrying better value per dollar on lists that lean global.
Frank Family Cabernet Sauvignon
Frank Family is a fine Napa producer, but it's also one of the most recognizable names in the mid-tier California Cab market. That recognition comes with a markup premium. With 2,100 bottles to choose from, you can almost certainly find something more interesting at a better price — ask the staff to steer you.
Argentine Malbec + House Steak
Malbec and beef is a cliché for a reason — it works. The grape's dark fruit and soft tannins stand up to a seared cut without fighting it, and Argentina's version tends to come in at a friendlier price than the Napa equivalent.
The Bottom Line
Sovian is doing something genuinely unusual for Georgetown — a deep, globe-spanning cellar in a town that mostly asks for whatever's on draft. If you live out here and care about wine, this is your spot; if you're driving in from Austin, the list is worth the trip.
