Sixty-eight labels in a historic downtown Georgetown saloon is a pleasant surprise — this isn't the place you'd expect to find Cloudy Bay next to a Texas Pet Nat. The list opens with a sparkling section that actually has some range, and pricing stays mostly honest across the board. It's not trying to be a wine bar, but it's clearly trying.
The white wine program does most of the heavy lifting here, with a solid run of Sauvignon Blancs spanning from Llano Estacado local loyalty all the way up to Domaine des Coltabards Sancerre at $80. The sparkling section shows genuine range — William Chris Pétillant Naturel Rosé sitting alongside Perrier-Jouët Belle Epoque is a fun contrast. Pinot Grigio gets its own lane with four options including Sokol Blosser Estate Pinot Gris, which stands out from the usual Italian suspects. The list skews heavily white and bubbly, so if you're a red drinker who came for the ribeye, you may find yourself working a little harder to find your bottle.
Twenty-four by-the-glass options for a Georgetown steakhouse is genuinely impressive — that's not a token pour list. Glass prices run $10–$15, which is reasonable for the market without being a giveaway. We don't have visibility into how often the BTG list rotates, but the sheer volume suggests there's real intent behind it.
Yealands Sauvignon Blanc — $40
New Zealand Sauvignon Blanc at $40 flat is solid steakhouse math. Yealands punches above its price point with clean, citrus-driven character, and you're not paying a penalty for the New Zealand import tax that usually shows up on restaurant lists.
William Chris Pétillant Naturel Rosé
A Texas Pet Nat on a steakhouse wine list is not something you see every day. William Chris is one of the better Texas producers working with low-intervention style, and this bottle will get overlooked by everyone ordering La Marca out of habit. Their loss.
Cloudy Bay Vineyards Sauvignon Blanc
At $72, you're paying mostly for the name recognition. Cloudy Bay built its reputation in the 90s and has been coasting on it since. The Yealands or even Girard at $60 gives you more interesting drinking for less money.
Domaine des Coltabards Sancerre + Seafood
Sancerre and seafood is a classic for a reason — the mineral-driven Loire Sauvignon Blanc cuts through richness and lifts delicate flavors without overpowering them. At $80 it's the splurge call on this list, but it earns it at a table with fish.
The Bottom Line
Wildfire isn't trying to be a wine destination, but it respects wine enough to build a real list at fair prices — and that's more than most Texas steakhouses bother to do. If you're in Georgetown and want something more interesting than the usual suspect bottles, this is your spot.
