The wine list here reads like a greatest hits album of California Cabernet — Caymus, Silver Oak, Stag's Leap, Opus One, all present and accounted for. It's a comfort food list for wine drinkers who know what they want and don't want any surprises. Wine Spectator handed them an Award of Excellence in 2025, and honestly, you can see why — the list is curated with real intention around the food.
About 150-200 bottles deep, this is a California-forward list built to serve USDA Prime beef, and it does that job without apology. Napa Cabernet dominates — Beringer Private Reserve, Chateau Montelena, Far Niente, Jordan — names that earn their place on any serious steakhouse list. There's a Duckhorn Merlot for the table that ordered 'something a little lighter,' and Rombauer Chardonnay for the person who's not doing red tonight. What's missing: anything adventurous — no Rhône, no Italian, minimal domestic options outside California. If you came hoping for a Barolo to go with the ribeye, you're in the wrong zip code.
The by-the-glass program runs 15-25 options, which is a solid spread for a steakhouse format. Expect the usual California suspects poured by the glass — Rombauer Chardonnay almost certainly makes an appearance, and there's likely a Cab or two that earns its keep. No evidence of active rotation or special pours, so what you see on the menu is probably what's been sitting there for a while.
Jordan Cabernet Sauvignon, Alexander Valley — $90–$110
Jordan consistently overdelivers for the price point. On a list where bottles can sprint to $500+, this is the bottle that drinks up, makes the table happy, and doesn't require a second mortgage.
Chateau Montelena Cabernet Sauvignon
Most people at a Ruth's Chris reach straight for Caymus or Silver Oak out of habit. Chateau Montelena is the quieter pick — historic Napa house, more restrained and structured than the fruit-forward crowd-pleasers dominating this list. It actually gets better as the steak sits.
Opus One
Opus One is a genuinely great wine, but on a Strip steakhouse list in Las Vegas, you are paying a premium on top of a premium on top of the premium the winery already charges. The restaurant margin here is brutal. If you want Opus One, buy it at retail and bring it in — or just order the Jordan and be smarter than the table next to you.
Stag's Leap Wine Cellars Cabernet Sauvignon + 22oz Cowboy Ribeye
Stag's Leap brings that classic Napa structure — dark fruit, firm tannins, good acid — that cuts through the fat on a massive bone-in ribeye without overwhelming it. It's the kind of pairing that makes the whole table go quiet for a second.
