Wednesday Redeems a Very Corporate List

Wingman Metrics
The wine list at PF Chang's Mobile is exactly what you'd expect from a national chain: tidy, inoffensive, and built to move bottles without confusing anyone. Twenty-six labels, mostly California and Washington with a couple of international crowd-pleasers sprinkled in for credibility. Nothing here is going to surprise you — but Wednesday changes the math entirely.
The list leans heavily on reliable brand names that sell themselves: Rombauer, Sonoma-Cutrer, Cloudy Bay, Stags' Leap, Santa Margherita. These are bottles people recognize from grocery stores and order without asking questions, which is precisely the point for a high-volume chain. There's a token nod to bubbles with Moët & Chandon Impérial and Whispering Angel for the rosé crowd, plus Caymus-Suisun's 'The Walking Fool' and The Pessimist by Daou for the big-red set. Don't come looking for Burgundy, Rioja, or anything remotely adventurous — the list plays it safe from top to bottom. The California and Washington focus is coherent if uninspired, and it does pair reasonably well with the spiced, saucy dishes on the menu.
By-the-glass specifics aren't publicly confirmed for this location, but based on national menu patterns, expect the usual suspects — K-J Chardonnay, Joel Gott Cab, Mark West Pinot Noir — at per-glass prices that clock in between $10 and $13. That's not outrageous for a sit-down chain, but the markup on those pours runs 200–270% over retail, which stings a little. Wednesday by-the-glass or bottle pricing isn't specified as half-off — the Wine Wednesday deal appears to apply to bottles — so factor that in before you settle in for a long glass-pour session mid-week.
Chateau Ste. Michelle Columbia Valley Riesling — $38 (est. bottle) / $10 glass
At half-price on Wine Wednesday, this bottle lands around $19 — and it's genuinely well-suited to spicy, umami-heavy dishes. Ste. Michelle's Columbia Valley Riesling consistently punches above its retail price of around $9, offering bright stone fruit and good acidity. The markup is still steep at full price, but on Wednesday it becomes one of the more honest pours on the menu.
The Pessimist by Daou Paso Robles Red Blend
Most people at PF Chang's are reaching for the Cab or the Pinot, so this Daou blend gets overlooked. It's a Petite Sirah-heavy red with enough fruit and structure to hold its own against bold sauces, and Daou consistently over-delivers for the price point. If you're going red, this is the one worth ordering.
Kendall-Jackson Vintner's Reserve Chardonnay
You can buy this bottle at Publix for $13 on the way home. At full restaurant pricing around $46 a bottle, that's a 269% markup for something with zero discovery value. If you want Chardonnay, the Sonoma-Cutrer or Rombauer are at least aspirational choices for the same category.
Cloudy Bay Marlborough Sauvignon Blanc + Chang's Spicy Chicken
Cloudy Bay's zippy grapefruit-and-grass profile cuts right through the heat and sweetness in the Spicy Chicken sauce. It's one of those pairings that actually makes both the food and the wine taste sharper than they would alone — and it's one of the stronger bottles on the list in the first place.
Wednesday — National Wine Wednesday promotion: half-off all bottles of wine and Champagne, all day Wednesday. Dine-in only; cannot be combined with other offers.
✔️ The Bottom Line
PF Chang's Mobile isn't a wine destination by any stretch — the list is chain-standard, the markups are steep, and the staff rotation means you're on your own. But Wine Wednesday cuts bottles in half, and suddenly Cloudy Bay and Stags' Leap at half price is a genuinely solid deal. Go on a Wednesday, order strategically, and ignore the K-J Chard.

Debris isn't a wine destination, but it's a solid neighborhood spot that takes its short list seriously enough to earn your trust. If you're grabbing a po-boy downtown and want a decent glass without drama, this gets the job done.

Dauphin's is a reliable special-occasion spot where the view does some of the heavy lifting the wine list won't. Come on a Wednesday when the half-price promotion is running and suddenly a Steep list becomes a genuinely solid evening — outside of that, manage your expectations and stick to the better-value bottles.

Wintzell's isn't where you go to nerd out on wine — it's where you go to eat the best oysters in Mobile and not worry too much about what's in your glass. The wine list is honest, fairly priced, and gets the job out of the way; just order the Riesling or the bubbles and focus on the food.

Half Shell isn't a wine destination and doesn't need to be — it's a charbroiled oyster destination that happens to serve wine. Order the Prosecco, order the oysters, and don't overthink it.

Mellow Mushroom Old Shell Road is not a wine destination — it's a pizza spot that happens to have wine — and on most nights that's exactly fine. Show up on a Wednesday, grab a Josh Cab at half-price, and put your energy into the pizza.

Bravo Mobile isn't a wine destination, but it's a competent list for what it is — and on Wednesdays, that $7 glass promotion makes it genuinely worth showing up for. Go midweek, order the Santa Cristina, and calibrate expectations accordingly.

Come for the lettuce wraps, skip the wine list — unless it's Wednesday, in which case half-price bottles flip this from a bad deal to a passable one. The list earns a Lazy List badge on its own merits; Wine Wednesday is the only thing keeping this from being a full cocktails-only recommendation.

Nawa is a fine place to eat; the wine list won't embarrass anyone, but it won't excite them either. Grab the Amarone or the Broquel Malbec, ignore the celebrity bottles, and let the food do the heavy lifting.

PF Chang's Tyler Street isn't a wine destination, but it's not trying to be — and within those limits, it mostly delivers. Bring someone who wants a solid glass with dinner, not someone who wants to geek out over a list.
