The wine list at Debris isn't trying to impress you — and somehow that works in its favor. It's short and unpretentious, exactly like the room, and it doesn't get in the way of the real stars on the menu. What's here is curated just enough to feel intentional rather than afterthought.
We're looking at an estimated 15–25 bottles tilted toward rosé, sparkling, and approachable whites, with reds rounding things out on the back end. The regional spread is broad without being deep — this isn't a list built for geeks, but it covers the bases for a crowd that's here for po-boys and a good glass of something cold. Bellerouche Rosé shows up as the anchor, which is a smart call — it's a crowd-pleaser with actual flavor behind it. There are no deep-cellar surprises here, but nothing embarrassing either.
The by-the-glass program runs an estimated 6–10 options, starting at $10 a pour. That floor price is reasonable for a Downtown Mobile spot, and the Lunetta Prosecco on the list gives you a low-commitment fizzy option that works well in this casual setting. Rotation doesn't appear to be a priority — the list reads more like a steady fixture than something that changes with the seasons.
Bellerouche Rosé — $10/glass
This Southern Rhône rosé from M. Chapoutier punches above its price point — it's got actual structure and dried herb character, not just pink water. At the $10 floor price, it's the smartest pour on the list.

Lunetta is fine, but it's grocery store Prosecco at a restaurant markup. There's nothing wrong with it per se, but if you're spending money at Debris, put it toward the Bellerouche instead.
Bellerouche Rosé + Roast Beef Debris Po-Boy
The savory, juicy richness of the roast beef debris needs something with enough acidity to cut through it and enough fruit to not get lost. The Bellerouche Rosé does exactly that — it's dry but not austere, and it holds its own against the gravy and crusty bread.

Dauphin's is a reliable special-occasion spot where the view does some of the heavy lifting the wine list won't. Come on a Wednesday when the half-price promotion is running and suddenly a Steep list becomes a genuinely solid evening — outside of that, manage your expectations and stick to the better-value bottles.

Wintzell's isn't where you go to nerd out on wine — it's where you go to eat the best oysters in Mobile and not worry too much about what's in your glass. The wine list is honest, fairly priced, and gets the job out of the way; just order the Riesling or the bubbles and focus on the food.

PF Chang's Mobile isn't a wine destination by any stretch — the list is chain-standard, the markups are steep, and the staff rotation means you're on your own. But Wine Wednesday cuts bottles in half, and suddenly Cloudy Bay and Stags' Leap at half price is a genuinely solid deal. Go on a Wednesday, order strategically, and ignore the K-J Chard.
