It's an Italian white that most American diners walk right past — crisp, savory, with a slight bitter finish that cuts through pasta and olive oil like it was engineered for the job. It's almost always the best value white on any Italian list.
Pinot Grigio
Generic Pinot Grigio is the safe, boring order that exists on every Italian restaurant list in America. At a place with real Willamette Valley Pinot Gris and actual Italian depth, ordering a pedestrian Pinot Grigio is a waste of your time and your table. You're better than this. Go literally anywhere else on the list.
Barolo + Osso buco
Osso buco is braised veal shank — rich, fatty, deeply savory, with a bright gremolata finish. Barolo is Nebbiolo-based, high-acid, high-tannin, and built for exactly this kind of dish. The tannins strip the fat, the acidity cuts through the braise, and the wine's dried rose and tar character plays directly off the marrow. This is one of the great classic pairings for a reason, and Nick's is one of the few places in Oregon where you can do it right.
