The wine list at Il Palio lands with real weight β 130 labels deep, anchored almost entirely in Italy, and curated with the kind of intention you rarely find outside major metro dining rooms. This is a hotel restaurant that has no business being this good, and yet here we are. From the first glance, it's clear someone with genuine expertise built this list.
The Italian coverage is exceptional β Brunello di Montalcino alone shows up from Poggio di Sotto, Argiano, and Siro Pacenti (Vecchio Vigne), giving you real comparison across styles at the same vintage. Super Tuscans get their due with Sassicaia and Tignanello, and Gaja's Barbaresco anchors the Piedmont section with authority. There's a Paolo Bea Montefalco Sagrantino 2018 on here, which tells you everything β that's a producer who doesn't show up on lazy lists. The California presence (Stag's Leap, Andrew Geoffrey Diamond Mountain) feels deliberate rather than filler, rounding out the book without diluting the Italian identity.
Il Palio does quartinos β 8-ounce pours rather than standard 5-ounce glasses β which we respect as a philosophy even if it limits impulse ordering. You get 13 options across white, red, and pink, priced $15β$25 per quartino. The selection rotates with the Italian-forward theme, and with a sommelier on staff, the pours are well-chosen rather than default crowd-pleasers.
Paolo Bea Vigneto Pagliaro Montefalco Sagrantino 2018 β Bottle (price not listed on public menu)
Sagrantino is one of Italy's most tannic, age-worthy grapes and Paolo Bea is the benchmark producer. Finding this on a Chapel Hill list at any price is a win β if the bottle price is fair, this is your move.
Siro Pacenti Vecchio Vigne Brunello di Montalcino 2018
Most tables ordering Brunello here will gravitate toward Poggio di Sotto's reputation. Siro Pacenti's Vecchio Vigne is the quieter overachiever β old-vine concentration with a more accessible texture. Don't sleep on it.
MoΓ«t & Chandon Brut Imperial NV
At $155, you're paying a steep hotel premium for NV MoΓ«t β a bottle that retails around $40. With Champagne like Dom PΓ©rignon on the list, the value calculus is at least more honest at the top end. Skip the entry-level bubbly and either step up or skip Champagne entirely.
Antinori Toscana Tignanello 2021 + Wood-grilled steak
Tignanello's Sangiovese-Cabernet blend has the backbone and dark fruit to stand up to char and beef fat without overwhelming the dish. It's a classic Tuscan match β the acidity cuts through the richness while the tannins do exactly what tannins are supposed to do.

Il Palio is the best Italian wine list in the Triangle β it's not particularly close, and it's genuinely competitive on a national scale. The markups are real, but so is the curation; if you're going to spend, spend here.
