The wine list at Hyde Park Prime reads like a greatest hits album of California Cabernet — every name you already know, arranged for maximum dinner-party comfort. It's confident, polished, and exactly what you'd expect from a prime-cut steakhouse trying to make anniversaries and corporate accounts feel taken care of. Nothing here will surprise you, and honestly, that seems to be the whole point.
This is a Napa and Sonoma show, full stop. Caymus, Jordan, Silver Oak Alexander Valley, Stag's Leap Artemis, Duckhorn, Far Niente — the roll call is impressive in brand recognition but narrow in imagination. There's no Old World counterweight, no Tempranillo or Rhône to break up the California monotony, and no indication that anyone on staff has been tasked with finding something outside the comfort zone. With 100-150 labels, the depth is there on paper, but it's largely horizontal — more of the same rather than genuinely different. If you love big California reds with your ribeye, you're covered; if you want to explore, you'll feel a little boxed in.
Ten pours by the glass is a reasonable program for a steakhouse of this tier, running $14-$25 per glass. The range likely mirrors the bottle list — California-forward, crowd-pleasing, nothing adventurous. At those glass prices, you're paying for the brand names on the label as much as what's in your glass.
Jordan Cabernet Sauvignon — $55+
Jordan is consistently one of the most fairly priced Sonoma Cabs at the restaurant level — it's a genuine, food-friendly wine that doesn't demand you spend Napa prices to drink well with a steak. If the bottle lands closer to the $55-$70 range here, it's the move.
Duckhorn Merlot
Everyone's eyes go straight to the Cabs, and that's exactly why you should be looking at the Duckhorn Merlot. It's rounder, more approachable, and genuinely underrated at a steakhouse — especially with a filet. Most tables overlook it chasing the Silver Oak, and that's their loss.
Caymus Cabernet Sauvignon
Caymus is everywhere, and restaurant markup on this bottle is reliably brutal. You're paying a significant premium for a wine that's become more of a status symbol than a value play — the juice doesn't justify the price when Jordan or Stag's Leap Artemis are sitting right next to it on the list.
Far Niente Chardonnay + Lobster Tail
Far Niente Chardonnay is rich and textured enough to stand up to butter-poached lobster without getting lost — it's one of the few wine-and-dish combos on this list where both sides are pulling their weight. Order it cold and don't let the table talk you into a Cab just because you're at a steakhouse.
