Walking into Hudson Chatham's Warren Street tasting room, the list is short — 16 wines, all theirs — and that's the whole point. This isn't a curated restaurant program trying to please everyone; it's a winery betting hard on cold-climate hybrid grapes that most people have never heard of. Either you're curious, or you're in the wrong place.
The lineup leans heavily into New York State hybrid and cold-hardy varietals: Traminette, Cayuga, Seyval Blanc, Chambourcin, Frontenac Gris, Marquette. These are grapes bred to survive Hudson Valley winters, and Hudson Chatham grows them without apology. There's a natural wine thread running through the program — the Pet Nats and the Pillows & Leaves orange wine signal that the winery is thinking beyond standard table pours. The sparkling Blanc de Blanc and a rosé round things out, giving the list more range than its 16-label count suggests. The gap, obviously, is anything from outside the estate — if you want Burgundy or Barolo, go somewhere else.
Every single wine on the list is available by the glass, which makes this one of the more generous pour programs you'll find in the region — no gatekeeping, no 'bottle only' frustration. Pours run $20–$40, which is fair given these are estate wines in a destination tasting room. The flight option is the smart entry point if you don't know where to start.
Hudson Chatham Winery Wine Flight — $20–$40 range
If you're new to cold-climate hybrid grapes — and most people are — the flight is the move. You get a structured tour of the lineup without committing to a full glass of something unfamiliar. More information per dollar than almost anything else on the list.
Hudson Chatham Winery Frontenac Gris
Frontenac Gris is an obscure cold-hardy hybrid that almost no one outside of the Upper Midwest and Northeast has encountered. It tends to produce wines with bright acidity and stone fruit character — unusual enough to be interesting, approachable enough not to alienate. Most people walk past it. Don't.
Hudson Chatham Winery Rosé Cider
A rosé cider in a wine tasting room is a fence-sitter that satisfies neither wine drinkers nor cider fans particularly well. If you're here for New York State wine, stay in your lane — there are more interesting pours demanding your attention.
Hudson Chatham Winery Seyval Blanc + Cheese and charcuterie plate
Seyval Blanc's lean acidity and mild citrus profile cuts through soft, creamy cheeses without overwhelming them — it's the kind of white that makes a cheese plate taste more intentional than it has any right to. Classic tasting room logic, executed well.
🎲 The Bottom Line
Hudson Chatham is a niche destination — if you're into New York State hybrid grapes and want to understand what the Hudson Valley is actually growing, this tasting room is worth the detour. If you want a broad restaurant wine list, that's not what this is, and that's fine.
