Walking into Cork It, the wine list hits you like a friendly wave — 74 labels isn't sprawling, but for a college town wine bar in Gainesville, it's doing more work than you'd expect. The by-the-glass program is genuinely impressive at 33 options, which means you can drink your way around the list without committing to a bottle. The price ceiling of $20 a glass keeps things approachable, and that matters here.
The list leans heavily into crowd-pleasing European whites and domestic workhorses — Torresella shows up multiple times across sparkling and still categories, which suggests a house favorite relationship with that producer rather than a deep-dive curation approach. That said, there are small sparks of interest: the Colliano Macerated White signals that someone here knows what an orange wine is, and the Mistura Unica Vinho Verde shows a willingness to go beyond the obvious. The red side is thinner — Levee and Loam Cabernet, Gen 5 Merlot, and a Sella Antica Red Blend cover the basics without much adventure. Champagne gets a nod with the Devaux at $70, which is a reasonable bottle price for something genuinely good.
Thirty-three by-the-glass options is the headline here — that's a serious commitment for a small bar. You can move from Campo Viejo Cava at $8-ish to Raeburn Chardonnay to the Colliano Macerated White all in one sitting without repeating yourself. The glass prices top out at $20, which means even the upper tier isn't punishing you.
Devaux Champagne — $70
Devaux is a legitimate grower-style Champagne house that routinely retails in the $45-55 range — seeing it on a wine bar list at $70 rather than the usual 3-4x restaurant markup makes this the smart pull if you're celebrating anything at all.
Colliano Macerated White
Most people scanning this list will head straight for the Pinot Grigio or the Chardonnay. Don't. The Colliano Macerated White is the only orange wine on the menu and it signals that whoever built this list has at least one adventurous bone in their body — order it before the table defaults to something boring.
Conundrum White Sauvignon Blanc
At $42 a bottle, Conundrum is overreaching for what it is — a blended California white that retails for around $15 and leans sweet to hit the widest possible audience. That's close to a 3x markup on a grocery store staple. Pass.
Mistura Unica Vinho Verde + Charcuterie board
Vinho Verde's low alcohol, bright acidity, and faint spritz cut right through cured meats and rich cheeses without competing with them — it's the charcuterie board's best friend, and at $34 a bottle it's not asking much in return.
The Bottom Line
Cork It punches above its weight for a Gainesville wine bar — fair prices, a huge by-the-glass list, and at least a few genuinely interesting picks hiding among the crowd-pleasers. If you're in town and want a real glass of wine rather than a rum bucket, this is where you go.
