Wingman Metrics
Nineteen bottles isn't a lot, but Z Bistro earns the right to that short number by making most of them count. The list reads like someone actually thought about it — not just called a distributor rep and said yes to everything. For a neighborhood bistro in Carson City, that alone puts it ahead of the curve.
The list punches above its weight by mixing California staples with some genuinely interesting detours — a 2016 Trimbach Pinot Gris Réserve from Alsace, a 2018 Charly Thévenet Régnié from Beaujolais, and a Châteaude Trinquevedel Tavel Rosé from the Rhône all signal that whoever curated this wasn't just filling slots. The Sierra Foothills gets some deserved love with two Andis bottles, and a North Macedonian Pinot Noir from Tikveš is the kind of curveball you don't expect to see in northern Nevada. Gaps exist — no real Burgundy, no Italian reds to speak of — but for 19 bottles, the breadth is impressive. It's a list you can actually have a conversation about.
Eleven pours by the glass is a healthy ratio for a list this size, landing between $12 and $16, which is honest pricing for the market. The three rosés all make it to the by-the-glass list, which is the right call for a bistro with this kind of menu. Sparkling is essentially bottle-only, though the Mionetto 187ml acts as a single-serve entry point if you just want bubbles without committing.
2018 Charly Thévenet Régnié 'Grain & Granit', Beaujolais — $35
Thévenet is a proper Beaujolais producer making wines that routinely retail for $30+ — finding this on a Carson City bistro list at the low end of their bottle range is a genuine win. Light, earthy, and built for food.
2016 Others, Department 66 Grenache, Maury, France
Maury Grenache is a category most diners scroll past assuming 'fortified dessert wine' — but a dry Grenache from Roussillon at this age has depth and warmth that'll stop you mid-bite. Most tables will order the Cab and miss this entirely.
2019 Beaulieu Vineyard Cabernet Sauvignon, Napa Valley
BV Napa Cab is a grocery store staple that shows up on lists like this because it's a name people recognize. Nothing wrong with the wine, but you're paying bistro markup on a bottle you've probably seen at Safeway. The J. Lohr Hilltop next to it is a better use of your money.
2020 Andis 'Painted Fields' Old Vine Zinfandel, Sierra Foothills + Steak frites
Old vine Zinfandel from the Sierra Foothills brings enough fruit and pepper to stand up to a proper steak without overwhelming it. The wine's got grip but not a ton of tannin — meaning you won't be fighting your frites for the last sip.
✔️ The Bottom Line
Z Bistro isn't trying to be a wine destination, but it's clearly trying — and in a market where most restaurants phone it in, that effort shows. If you're eating here anyway, you're in good hands with a bottle.
Casino Fandango · Carson City · American Grill / Casino Restaurant
The Governor's Grill wine program is strictly background noise — functional enough if you just need something in your glass while you watch the game, but not a reason to make any decisions about where you eat. Order a cocktail or a beer and put your dining energy toward the steak.

South Carson · Carson City · Pizza, Casual American
Mountain Mike's isn't trying to be a wine destination, and the list makes that abundantly clear. Grab a $5 Edna Valley if you need wine, then focus on the pizza — which is, frankly, the whole point.

West Side · Carson City · Bistro & Wine Café
West Side Bistro is a solid neighborhood wine café doing the right things with a small, California-focused list — just know the markups will sting a little. Send your friends here for a relaxed glass and a charcuterie board, not a deep-dive wine night.

South Carson · Carson City · Steakhouse
Casino Fandango Steakhouse delivers a wine list that's safe, California-centric, and marked up the way casino restaurants tend to be. It's not a destination for wine lovers, but if you're already here for the prime cuts, Jordan Cab and a good steak will sort you out just fine.

Downtown / Casino Row · Carson City · American Café
TJ's Café is a solid spot for Indonesian-American comfort food inside a small Nevada casino, and the wine list is priced so low it's almost impossible to complain. Almost. Send your friends here for the nasi goreng; tell them to order a beer.

Cellar 8 is doing something genuinely rare — bringing a thoughtful, curiously assembled wine program to a downtown that didn't have one, inside a space that feels like it belongs to the neighborhood. Send your friends here, especially if they think Nevada is a cocktail state.
