The wine list at Whiskey 'N Rye knows exactly what it is — a supporting cast for dry-aged beef in Santa Barbara Wine Country. It doesn't try to be a wine bar, and that self-awareness is actually refreshing. Forty to eighty labels sounds modest until you realize most of them are pulling from the valley floor outside your window.
This list leans hard into its zip code, which is the right call. Foxen, Zaca Mesa, Dierberg, and Happy Canyon represent some of the best Santa Ynez has to offer, and seeing all four on a hotel steakhouse list suggests someone did their homework. The Rhône varietal section is a quiet flex — this region grows Syrah and Grenache as well as almost anywhere in California, and the list seems to know it. What's missing is any real depth outside California; if you're hunting an old-world bottle to go with your prime rib, you're mostly out of luck. Still, when the backyard is this good, playing it local is a defensible strategy.
Ten to sixteen pours by the glass is a solid number for a hotel restaurant, and the $14–$22 range keeps things honest. The glass program appears built around the same local producers anchoring the bottle list, so you're not getting stuck with generic California bulk wine while the good stuff stays corked. We'd love to see more rotation here, but what's on offer drinks well above its price point given the terroir.
Zaca Mesa Syrah — $55
Zaca Mesa has been farming Santa Ynez Syrah longer than almost anyone, and their wines consistently punch above their bottle price. At the low end of the list's pricing, this is the move if you want something that actually tastes like where you are.
Local Santa Ynez Valley Rhône Varietals
Most guests walk in looking for Pinot Noir or Cabernet and overlook the Rhône pours entirely. That's a mistake. The valley's warm days and cool nights are basically built for Grenache and Syrah, and these bottles often fly under the radar at prices that haven't caught up to their quality yet.
Happy Canyon Cabernet Sauvignon
Happy Canyon makes respectable wine, but Cabernet from this corner of Santa Barbara County tends to cost more than it delivers compared to what you'd get from Napa or Paso at a similar price. On a steakhouse list where the beef is the star, spend those dollars on Dierberg or a local Syrah instead.
Dierberg Cabernet Sauvignon + Dry-Aged Steak
Dierberg's Cabernet has the structure and dark fruit weight to stand up to a heavily seared, dry-aged cut without either element bullying the other. The wine's tannins do exactly what you want them to do alongside a rich, fatty steak — clean the palate and make you want another bite.

Whiskey 'N Rye isn't trying to be a destination wine program, but if you're eating a serious steak in Santa Ynez Valley and drinking the local Syrah or Foxen Pinot, you're doing exactly what this region was made for. Send a friend here — just tell them to skip the Cab and go local.
