The wine list at Vail Chophouse does exactly what you'd expect from an upscale mountain steakhouse — it gives you familiar names, California-heavy selections, and enough range to keep a table happy without surprising anyone. It's a list built for confidence, not discovery. Nothing wrong with that, especially when you're watching ski traffic roll through Lionshead Village.
The 80-150 label list leans hard into California Cabernet and New World crowd-pleasers, with France and Italy rounding out the edges. You'll find Jordan Cabernet from Alexander Valley and Far Niente from Oakville representing the serious end of the Cab spectrum — both solid steakhouse anchors. The gaps are real though: no meaningful Burgundy depth, light on Italian reds beyond the usual suspects, and the presence of Josh Cellars alongside Far Niente tells you this list is trying to serve everyone from the après-ski crowd at the bar to the anniversary dinner table. It manages both, just not equally well.
The by-the-glass program runs 12-18 options at $15-$28, which is par for the Vail course but still stings a little when you're looking at mid-shelf pours. Kim Crawford Sauvignon Blanc anchors the white side — reliable, crowd-friendly, nothing revelatory. Rotation doesn't appear to be a priority here; this reads more like a static list that hasn't been refreshed since someone decided Kim Crawford was a safe bet.
Jordan Cabernet Sauvignon, Alexander Valley — $60–$90 (bottle estimate)
Jordan is the sweet spot on this list — a wine that actually belongs on a steakhouse table, with the structure to stand up to a prime cut and a retail price that doesn't get completely demolished by the restaurant markup. It's the most honest value play here.
Far Niente Cabernet Sauvignon, Oakville
Most tables at a place like this default to Jordan and never look further. Far Niente is a genuinely serious Napa Cab that punches well above its visibility on this list — if you're splitting a bottle and the occasion calls for it, this is the one to order before the table talks itself into another round of cocktails.
Josh Cellars Cabernet Sauvignon
Josh Cellars is a $12 bottle at your grocery store. Seeing it priced at restaurant margins — even the $10 bar pour listed here — is the kind of thing that makes you do math on your phone under the table. Order a cocktail or spend the difference on Jordan.
Jordan Cabernet Sauvignon, Alexander Valley + Prime Steak
Jordan's classic Alexander Valley structure — firm tannins, dark fruit, enough acid to cut through the fat — is exactly what a well-marbled prime cut needs. It's not a complicated match, but it's the right one, and sometimes that's the whole point.
