The wine list at Tinajas opens like a love letter to bubbles — and not the kind you'd expect in the middle of the Sonoran Desert. Sixty-four labels, a clear curatorial point of view, and prices that don't immediately make you want to order water.
This list is unapologetically sparkling-first, with an impressive spread that runs from a $33 St. Kilda Brut Cuvée for entry-level sipping all the way up to a $195 Domaine Petit & Bajan Blanc de Noirs Grand Cru and a Louis Roederer Rosé Vintage 2016 at $158. The geographic range is legitimately interesting: Champagne, Franciacorta, Cava, Crémant de Bourgogne, Tasmanian Cuvée, Sicilian Metodo Classico, and a Birichino Pétillant Naturel for the natural wine crowd. Beyond bubbles, the list carves into light whites, medium whites, full whites, and reds — all 64 bottles showing intentionality rather than filler. The weak spot is depth outside the sparkling category, but what's here is well-chosen.
By-the-glass specifics weren't available at time of review, which is a real gap for a wine bar format — that information should be front and center. If the glass program reflects the same curatorial care as the bottle list, it could be exceptional; if not, it's a missed opportunity to let people explore the range without committing to a bottle.
Raventos i Blanc Cava Brut L'hereu Blanc de Blanc 2022 — $53
Raventos is one of Cava's most serious producers — they actually left the DO to pursue higher standards. At $53, you're drinking a wine that punches well above its price class, and most guests will walk right past it for the Champagnes.
Murgo Brut Metodo Classico 2021
A traditional-method sparkling from the slopes of Mount Etna in Sicily — volcanic minerality, serious bubbles, and almost nobody outside of dedicated Italian wine geeks knows this producer. At $55 it's a steal and a conversation starter.
Champagne Lanson Le Black Label Brut
At $130 for the full bottle, Lanson is reliable but unexciting — it's airport Champagne at a price that could get you into far more interesting territory on this same list. The Gimonnet-Gonet L'Accord at $93 or the LeGras & Haas Grand Cru at $120 are better uses of that budget.
Bellavista Franciacorta La Scala 2018 + A charcuterie or cheese board
Franciacorta at this level — aged, precise, with fine persistent bubbles — cuts through fat and salt beautifully. The 2018 vintage gives it enough maturity to hold its own against aged cheeses and cured meats without getting lost.

Tinajas is doing something genuinely uncommon for Tucson: a thoughtfully curated, bubble-centric list with fair pricing and real range across sparkling styles and regions. Send a friend here if they think bubbles are just for celebrations — this list will change their mind.
