The menu opens and it's immediately clear someone made a decision here: this is a Willamette Valley showcase, full stop. Twenty-nine labels, nearly all from Twill Cellars and Johan Vineyards, and zero apologies about it. That kind of editorial focus is either a bold move or a trap — and honestly, it mostly works.
Twill Cellars dominates the list, running the full spectrum from entry-level Willamette Valley bottlings all the way up to single-vineyard expressions like the Vojtilla Vineyard and Stormy Morning Vineyard Chardonnays and Pinot Noirs at $55. Johan Vineyards fills the supporting role, offering their own Chardonnay and Pinot Noir for balance and comparison. There's also a sparkling program worth noting — three Twill Cellars bottles covering Brut Nature Rosé, Extra Brut, and a Blanc de Blancs, which is more fizz variety than most wine bars three times this size bother with. The gap is obvious: if you want Burgundy, Barolo, or anything beyond the Pacific Northwest, you're out of luck.
Seven pours, ranging from $9 to $18, and the spread is genuinely useful — you can drink entry Chardonnay for the cost of a beer or step up to the Johan Vineyards Chardonnay or a Dundee Hills Pinot Noir at $18. The $9 options (Molly's Vineyard Chardonnay and Stormy Morning Syrah) are the obvious starting point for anyone not yet committed to a full bottle.
Twill Cellars Stormy Morning Syrah 2023 — $9/glass
Oregon Syrah at $9 a glass is genuinely rare — this grape gets overlooked in the Willamette Valley conversation but Twill is doing serious work with it. At that price, order two.
Twill Cellars Vol. 1 Brut Nature Rosé
Most people scroll past the sparkling section to get to Pinot, but a Brut Nature Rosé from Oregon for $45 is worth stopping for. Zero dosage means nothing is hiding — this is either great or it isn't, and Twill earns the confidence.
Twill Cellars Molly's Vineyard Chardonnay (bottle)
At $55 a bottle, it's the same wine you can get by the glass for $9. The math doesn't change the wine, but the jump in price per bottle here feels steep when The Way Chardonnay is sitting at $22 and probably covers most of what you're looking for.
Twill Cellars Dundee Hills Pinot Noir 2024 + Cheese board
Dundee Hills Pinot at $18 a glass has the structure and red fruit to cut through rich aged cheese without overpowering anything delicate — the kind of pairing that makes the glass disappear faster than expected.
The Bottom Line
If you want to spend an afternoon actually understanding Willamette Valley wine across a single focused producer, there's no better setup in West Palm Beach. Just don't show up expecting a world tour — this room has a point of view and it's Oregon, all the way down.

Kitchen West Palm has no business having the Casanova di Neri Brunello and the Ménard-Geborit Muscadet on the same 13-bottle list — and yet here we are. It's small, priced fairly, and clearly curated by someone who actually drinks wine. Send a friend, order the Ridge.

Le Bar is a stripped-down concept that works because the six bottles it chose are actually worth drinking — unusual for a lounge where wine is often an afterthought. If you want depth, go elsewhere. If you want a smart glass of something Italian while you decompress, this earns its keep.

Il Bellagio is a perfectly decent place to drink Italian wine with Italian food on a warm West Palm Beach evening — just don't expect the list to surprise you, and steer clear of the Santa Margherita markup. Order the Chianti, grab a table on the plaza, and call it a reliable night out.
