Wingman Metrics
You walk into a restored 1800s barn in Canton, Ohio and somehow find yourself staring at a wine list made up almost entirely of estate-produced bottles from the property you're literally sitting on. It's a bold swing β the kind that either impresses or annoys depending on your mood. We were impressed.
Make no mistake: this is a house list through and through. Every bottle is a Gervasi Vineyard production, Italian-inspired in name and style but grown and made in Ohio. The range covers more ground than you'd expect β a Nebbiolo, a Riesling called Piove, a bourbon-barrel-aged Cabernet, a Zinfandel (ZinZin), and a handful of Chardonnay expressions including Ciao Bella and Bellina. If you came hoping to compare this against a Barolo from Piedmont, that's not the game here. But if you come curious and open-minded, you'll find a coherent, well-executed lineup that takes Ohio winemaking more seriously than most people outside the state do.
The by-the-glass program pulls from across the estate's full portfolio, which means you can taste through multiple styles in one sitting β a rare and genuinely fun opportunity at a winery restaurant. With upward of 15 options available, there's enough to keep the table busy without anyone repeating themselves. Rotation appears tied to estate production rather than seasonal sourcing, so don't expect surprises mid-year.
Piove Riesling β $12
Ohio Riesling doesn't get the credit it deserves, and this pour is the argument for why it should. Crisp, aromatic, and priced to move β it's the glass that converts skeptics.
Nebbiolo
Most people skip past it assuming Ohio can't pull off Nebbiolo. Skip that assumption. It's not Barolo, but it's a serious, tannic red that earns its spot on any table ordering the heavier pasta dishes.
Bella Dolce
Sweet dessert wines at winery restaurants tend to be the path of least resistance β and this one doesn't do much to challenge that reputation. Fine on its own, but there are far more interesting bottles on the list that deserve your last pour of the evening.
Cabernet Sauvignon Aged in Bourbon Barrel + Brick-fired steak pizza
The bourbon-barrel treatment gives this Cab a smoky, slightly sweet depth that mirrors the char on a brick-fired crust. It's the kind of pairing that sounds gimmicky until you taste it and stop talking for a minute.
π² The Bottom Line
The Bistro at Gervasi is a wildcard in the best sense β a full estate wine experience dropped into the middle of northeast Ohio, executed with more care than anyone from out of state would guess. Come curious, skip the cynicism, and let the Nebbiolo do its thing.

Ken Stewart's isn't reinventing the steakhouse wine list, but it's executing the classic version with enough depth and care to earn your trust. Show up on a Wednesday, grab the Jordan or Far Niente at half price, and you'll leave happy.

Green / East Akron corridor Β· Akron Β· Steakhouse / American
Prime 93 is a perfectly serviceable steakhouse wine list that won't thrill anyone but won't embarrass the table either β fair prices, California-forward, and honest about what it is. Send a friend here for the steak; just don't send them expecting a deep cellar.

Come for the seafood β the Shrimp & Grits and Crab Cake have genuine fans β but come on a Tuesday when the bottles are half off, because that's the only time the wine program makes financial sense. Any other night, order a cocktail.

Hibachi Japan's wine list isn't going to make anyone's bucket list, but it's priced fairly, covers the basics, and won't embarrass you on date night. Order the Riesling or Pinot Gris, enjoy the show, and don't overthink it.

Bonefish Grill Fairlawn won't give you a wine moment worth texting about, but it won't rip you off either β and in the chain restaurant landscape, that clears the bar. Show up during Social Hour, grab a Kim Crawford, and focus on the fish.
