The wine list at Hibachi Japan reads like a greatest-hits compilation of mainstream American grocery store staples — Josh Cellars, Kim Crawford, Kendall-Jackson. Nobody's going to be surprised, but nobody's getting ripped off either, which counts for something at a hibachi joint in East Akron.
Sixteen labels spread across California, Washington, Oregon, New Zealand, Argentina, and Italy. The white side actually has a little range — a Chateau Ste. Michelle Riesling from Washington and a King Estate Acrobat Pinot Gris from Oregon give you something beyond the wall-to-wall Chardonnay parade. The red side is thinner: Josh Cabernet and a Ruta 22 Malbec are doing most of the heavy lifting, and anything beyond that is slim. There are no real surprises here, but the list is functional and honest about what it is.
Ten of the sixteen bottles are available by the glass, which is a solid ratio for a casual steakhouse — you're not locked into a bottle just because your tablemates are sticking to sake. The selections mirror the bottle list almost entirely, so don't expect a secret glass pour that the menu isn't showing you.
Chateau Ste. Michelle Riesling — null
Washington Riesling from one of the most consistent producers in the country — dry enough to handle the soy and ginger hitting your plate, and priced squarely in the affordable zone. It's the smartest call on the list for hibachi food.
King Estate Acrobat Pinot Gris
Most tables here are going to reach for the Josh Chard on autopilot, but the Acrobat Pinot Gris from Oregon's King Estate is a more interesting glass — a little more texture, a little more stone fruit, and a better match for lighter sushi rolls and seafood off the grill.
Josh Cellars Chardonnay
It's fine, it's everywhere, and it costs less at every liquor store within five miles of this restaurant. You're not getting anything here you couldn't have bought on the way over.
Ruta 22 Malbec + Hibachi Steak
Argentine Malbec and a soy-kissed hibachi steak is a straightforward but genuinely effective match — the wine's dark fruit and soft tannins stand up to the char and savory sauce without fighting the table.

Hibachi Japan's wine list isn't going to make anyone's bucket list, but it's priced fairly, covers the basics, and won't embarrass you on date night. Order the Riesling or Pinot Gris, enjoy the show, and don't overthink it.
