The wine list at Savia reads like someone actually cares about Sicily β and that alone makes it stand out in a city where Pinot Grigio and Malbec dominate every menu. It's not deep, but it's deliberate. You're not drowning in options, you're being pointed somewhere specific.
Savia leans hard into the island β Etna, Nero d'Avola, Planeta β and doesn't apologize for it. Benanti on Etna Rosso and COS on Nero d'Avola are serious producers, not tourist-trap labels, which tells you the person building this list knows what they're doing. The range runs $55 to $200 a bottle, which is respectable for South Florida, though the top end pushes into splurge territory fast. Gaps exist β don't expect much beyond Italy, and Sicilian whites beyond the obvious get thin quickly.
Ten to sixteen pours by the glass is a solid spread for a focused list like this. We'd expect the Nero d'Avola and at least one Etna expression to anchor the glass program, which is exactly what you want when the whole point of the restaurant is to take you somewhere specific. Rotation isn't confirmed as an active program, so don't bank on weekly surprises.
Nero d'Avola by COS β $55β$70 (bottle estimate)
COS is a benchmark Sicilian producer making biodynamic wines that punch well above their price. Finding them on a Florida restaurant list at anywhere near retail-adjacent pricing is a minor miracle β order it.
Etna Rosso by Benanti
Most tables at Savia will default to something familiar. Don't. Benanti's Etna Rosso comes from volcanic slopes on the north side of the mountain and drinks like a leaner, more mineral-driven Pinot Noir β a style that Boca diners rarely encounter and will completely rethink after one glass.
Planeta Santa Cecilia
Planeta is a fine producer and Santa Cecilia is a decent Nero d'Avola, but it's also one of the most widely distributed Sicilian wines in the US. You've likely seen it at a dozen other spots. With COS and Benanti on the same list, there's no reason to default to the familiar name β you're paying restaurant markup on a wine you could grab at Total Wine.
Etna Rosso by Benanti + Pasta with braised meat or eggplant-based Sicilian ragu
Etna Rosso's high acidity and iron-laced mineral character cut through rich, slow-cooked sauces without overpowering them. It's the classic volcanic red meets old-school Sicilian cooking move β and it works every time.

Savia is doing something genuinely uncommon in Boca Raton: building a wine list around a single region with real intention and credible producers. The markup stings and the list won't satisfy everyone, but if you care about Sicilian wine at all, this is the most interesting glass you'll find in the city.

Show up Tuesday through Sunday expecting to pay for the room; show up Monday and actually enjoy the wine.
