You open the wine list inside the Hard Rock Casino and immediately know exactly what you're getting: a greatest hits album of American prestige bottles, weighted heavily toward Napa Cabernet. It's polished, it's safe, and it's priced accordingly — this list was built to impress expense accounts, not adventurous drinkers.
The 300-500 bottle list leans hard into Napa Valley and Sonoma, with Bordeaux and Burgundy making a supporting appearance for anyone who needs to feel continental. Caymus, Jordan, Silver Oak, Stags' Leap, Rombauer, Far Niente, Duckhorn — these are all the names your uncle who just started drinking wine would recognize. There's nothing wrong with any of these producers, but there's zero surprise here. Old World depth is shallow, and anything outside of California or France is basically a footnote.
The by-the-glass program runs 20-30 options at $14-$30 a pour, which is generous in count but predictable in content — expect the same Napa-and-friends lineup you'll find on the bottle list. There's no meaningful rotation happening here; this is a set-and-forget program that hasn't been reimagined since the menu was last laminated.
Jordan Cabernet Sauvignon — $50
Jordan consistently overdelivers for the price at retail, and if you can catch it near the lower end of their bottle pricing, it's the best bang-for-steak on this list — structured, elegant, and actually built for the table.
Stags' Leap Winery Cabernet Sauvignon
Everyone grabs for Silver Oak or Caymus on a list like this, but Stags' Leap Winery gets overlooked despite its serious Napa pedigree. It tends to be a touch more restrained and food-friendly than its flashier neighbors — exactly what a sizzling filet needs.
Rombauer Chardonnay
Rombauer is the Caymus of Chardonnay — wildly popular, massively marked up, and built on a flavor profile (butter on butter) that restaurant markups punish hardest. You're paying a premium for the brand recognition alone.
Duckhorn Merlot + Ribeye steak
The ribeye's fat and char need something with enough body to stand up but enough fruit to not fight — Duckhorn Merlot hits that sweet spot. It's plush and structured without the tannic aggression of the bigger Cabs on the list.
The Bottom Line
Ruth's Chris Biloxi does exactly what it's supposed to do — serve a dependable, if predictable, American wine list alongside an expensive steak inside a casino. Send a friend here if they want comfort and familiarity; send them somewhere else if they want discovery.
