The wine list at Ruth's Chris Atlantic City arrives thick and confident, like a guy in a sport coat who knows exactly what he's ordering. It's California-forward, Napa-heavy, and priced for the table that's already committed to the 40-day dry-aged ribeye. This is not a list for the adventurous — it's a list for the decisive.
Napa Cab is the undisputed captain here: Silver Oak, Caymus, Jordan, Stag's Leap, and Duckhorn Merlot are all present and accounted for, hitting every classic California checkbox. Bordeaux and Burgundy show up as supporting cast — enough to make the list feel grown-up, not enough to steal the spotlight from the Cabs. The 200-plus bottle depth sounds impressive until you realize a significant chunk of it is just every tier of the same familiar producers. What's missing is any sense of discovery — no Willamette Valley Pinot, no Walla Walla, no South American wildcard to break up the California march.
Expect a solid 15-plus glass pours anchored by the usual suspects — think Rombauer Chardonnay as the white anchor and a rotating Cab or two from the Napa roster. The pours are generous and the program is maintained consistently, but don't expect anything poured by the glass to surprise you. It's a greatest hits compilation, not a discovery channel.

Jordan is the rare California Cab on a list like this that's actually about elegance over fruit-bomb showmanship. It tends to carry a more reasonable markup than Caymus or Silver Oak at most Ruth's locations, making it the smartest move for a table that wants Napa character without the premium-tier invoice.
Stag's Leap Wine Cellars Cabernet Sauvignon
Most tables here are reaching for Caymus on autopilot, but Stag's Leap is the more historically significant and structurally interesting bottle — the winery that put California on the map at the 1976 Judgment of Paris. It drinks more classical and age-worthy than its louder neighbors on the list, and most diners scroll right past it.
Caymus Vineyards Cabernet Sauvignon
Caymus is perfectly fine wine that has been perfectly over-ordered at every steakhouse in America for the last two decades, which means it carries a perfectly inflated steakhouse markup. You are paying as much for the name recognition as you are for what's in the glass. Almost anything else on this list gives you more for your money.
Duckhorn Merlot + Filet Mignon
The filet is butter-finished and delicate for a steakhouse cut — it doesn't need a Cab with a sledgehammer tannin structure. Duckhorn Merlot brings plum, cedar, and enough body to stand up to the richness without trampling the tenderness of the meat. It's the move for anyone who wants the steak to remain the star.
