The wine list at Morton's Biloxi arrives thick and confident — 225 selections deep, with a Wine Spectator Award of Excellence backing it up. Inside the Golden Nugget, surrounded by casino carpet and steak smoke, it's a legitimately serious book. The format is classic steakhouse: California-heavy, internationally rounded, no surprises but no embarrassments either.
California dominates, as you'd expect — Napa Cabernets anchor the red side while Russian River Chardonnays and a handful of Sonoma selections hold down the whites. There's enough international coverage to keep things honest, with the usual suspects from Bordeaux and Burgundy representing the old-world flank. What's missing is any real adventure: no natural wine, no obscure regions, no producers you haven't already seen on a Delta flight. This list was built to reassure, not to surprise, and it does that job competently.
Twenty-eight pours by the glass is genuinely generous for a steakhouse, and the 6oz vs 9oz pour option is a smart touch that lets you either commit or graze. The range spans Moët Brut to Faust Napa Cab, which is a respectable arc. Rotation appears limited — this looks like a stable, set program rather than one that changes with the seasons.
Whispering Angel Rosé Côtes De Provence — $17/6oz
At $17 a glass, Whispering Angel is about as cheap as it gets anywhere with tablecloths on. It's not a steal in absolute terms, but relative to everything else on this list, it's the most you get for the least you spend.
Emmolo Merlot Napa Valley
Everyone at a steakhouse is racing toward Cabernet, and Emmolo Merlot just sits there quietly being excellent. It's a Wagner Family project — same people behind Caymus — and most tables walk right past it. Their loss.
Faust Cabernet Napa Valley
At $35 for a 6oz pour, Faust is doing a lot of work for a mid-tier Napa Cab that retails around $35 a bottle. The math on that markup is ugly. You're paying bottle price for a glass. Order the Emmolo and put the difference toward dessert.
Sonoma-Cutrer Russian River Ranches Chardonnay + Lobster tail
Russian River Ranches has the weight and acidity to stand up to drawn butter without getting lost, and Sonoma-Cutrer is built for exactly this moment. Lobster tail with this Chard is the surf-and-turf play that actually makes sense on a wine level.
The Bottom Line
Morton's Biloxi is a dependable wine program in a polished room — the staff knows what they're pouring, the glass count is strong, and the list won't let you down. Just know the markups are casino-adjacent, so pick your battles and avoid the by-the-glass Cab traps.
