The Morton's wine list reads exactly like you'd expect from a polished casino steakhouse — heavy on California Cabernet, light on imagination. It's confident in its lane, which is fine, but don't come here hoping to stumble onto something unexpected. This is a list built for the guest who already knows what they want.
Thirty-one labels with a clear west-coast tilt: Napa Valley Cabernet is the star, with names like Caymus, Groth, Silverado, and Orin Swift's 'Papillon' doing the heavy lifting. Oregon gets a nod via the Argyle Reserve Pinot Noir from Willamette Valley, and the bubbly section covers the basics — Veuve Clicquot, Moët Rosé, a Segura Viudas Cava, and a Villa Sandi Prosecco for the table that doesn't want to commit to Champagne prices. What's missing: anything from Europe beyond sparkling, no Rhône, no Bordeaux, no Burgundy, no Spain beyond a token Cava. It's a Napa fan club with a dress code.
The by-the-glass program is legitimately one of Morton's stronger plays — all 31 labels are available by the glass in both 6oz and 9oz pours, which is genuinely useful when you want to explore without committing to a bottle. During Power Hour, the house State & Rush lineup drops to $9 a glass, which is a solid deal in a casino fine-dining context. Just know that the top-end pours like Caymus ($43/6oz) and Austin Hope ($40/6oz) are priced for the expense-account crowd.
Duckhorn Merlot, Napa Valley — $17/6oz
Duckhorn Merlot is a legitimately well-made Napa bottle that retails around $40-45 — at $17 for a 6oz pour, you're getting a fair shot at one of the category's benchmark producers without needing to order a full bottle. It's the sanest price-to-quality ratio on the list.
Argyle 'Reserve' Pinot Noir, Willamette Valley 2017
Everyone at Morton's is eyeing the Cabs, but the Argyle Reserve Pinot is the quiet overachiever here. Willamette Valley Pinot at this tier is a genuine alternative to Burgundy for a fraction of the price, and most tables in a steakhouse walk right past it. If you're sharing the table with someone who doesn't want a bruiser red, this is your move.
Caymus Cabernet Sauvignon, Napa Valley
At $43 for a 6oz pour — north of $170 bottle-equivalent pricing — Caymus is being sold hard on its brand recognition, not its value. It's a smooth, reliable Napa Cab, but you're paying a significant casino-resort premium for a wine you can find at any good wine shop. The Groth or Silverado from the Bottle Shock promotion will drink comparably and likely cost you less.
Orin Swift 'Papillon' Red Blend, Napa Valley + Bone-in ribeye
Papillon is a Bordeaux-style blend — mostly Cabernet Sauvignon with Merlot, Malbec, and Petit Verdot — that brings enough weight and dark fruit to stand up to a well-marbled bone-in ribeye without completely overpowering the beef's character. It's the most interesting red on a list full of single-varietal Cabs, and it earns its price tag more honestly than most.
The Bottom Line
Morton's Atlantic City is a reliable, if unremarkable, wine program — safe, California-heavy, and priced for the casino environment. Send a friend here for a good steak and a decent glass of Duckhorn; don't send them expecting to discover anything new.
