California dominates here, and that's not necessarily a knock — Jordan, Duckhorn, Stag's Leap, and Caymus are reliable names that belong on a steakhouse list. Washington State makes a quiet appearance, and France shows up just enough to say it was invited. What's missing is any regional curiosity or independent producers that might push this list beyond its comfort zone. At 80-150 bottles, there's room for more ambition than what's on offer.
The by-the-glass program runs 10-20 options in the $12-$22 range, which is appropriate for the setting but not a bargain. Rombauer Chardonnay almost certainly anchors the white side — it's the crowd-pleaser's crowd-pleaser. Stag's Leap Wine Cellars Cabernet Sauvignon
Most tables at a place like this are reaching straight for Caymus on name recognition alone, which means Stag's Leap gets overlooked. It shouldn't. Stag's Leap tends to be more restrained and food-friendly than the Caymus fruit bomb — exactly what you want with a ribeye rather than a bottle you're fighting against.
Caymus Cabernet Sauvignon
Caymus is a $45-$60 retail bottle that casino lists routinely push past $120. It's sweet, extracted, and built for people who want to say they ordered Caymus — not for people who want to drink well with dinner. The markup alone is reason enough to look elsewhere on this list.
Duckhorn Merlot + Filet Mignon
Duckhorn Merlot has the structure to stand up to beef without overwhelming a cut as lean and tender as filet. It's a softer, more elegant move than throwing a big Cab at a delicate steak, and it's the kind of choice that makes you look like you actually thought about it.
