The wine list at Lon's arrives with the weight of something that's been taken seriously for a long time โ€” 400 to 600 bottles deep, anchored by California and France with a genuinely proud Arizona section that doesn't feel like an afterthought. The setting doesn't hurt either: historic adobe walls, wood-fire warmth, and the kind of candlelight that makes even a middling Cab look glamorous. This is a room built for a good bottle.

California is the obvious spine here โ€” Opus One, Caymus, Stag's Leap, Dominus, Chateau Montelena, Far Niente โ€” the greatest hits are all present and accounted for.
