L'Aperitivo sits inside Eataly Las Vegas, which sounds like a red flag — a wine bar inside a tourist-magnet retail hall — but the list surprises you. Every single one of the 26 bottles is available by the glass, which is either a bold operational commitment or a corkage workaround, and either way it works in your favor. The focus is unapologetically Italian, and that focus is a feature, not a limitation.
The list runs a tight but genuinely interesting circuit of the Italian peninsula: Etna Bianco and Etna Rosso from Sicily, Falanghina from Campania, Vermentino from Puglia, Barolo from Piedmont, Ripasso from Veneto, and a Maremma Sangiovese from Fattoria Le Pupille that most restaurants wouldn't bother stocking. There's no France, no California, no hedge-betting — this is Italy or go home. The top of the list stretches to the Ca' Viola 'Caviòt' Barolo at $132/bottle and the Il Borro super-Tuscan at $152, which give serious drinkers something to chase. Gaps exist — no Nebbiolo outside of the Barolo, no Soave, no Sicilian whites beyond the Etna — but at 26 labels, the curators made deliberate choices rather than lazy omissions.
Every bottle on the list is available by the glass, priced between $15 and $38, which is an unusually generous pour program for Las Vegas where glass options often top out at five or six tired picks. The entry-level tier — San Marzano 'Timo' Vermentino at $15/glass, Anselmi San Vincenzo at $16 — gives casual drinkers a real on-ramp without forcing them into a $17 house pour. The top-end glass pours (Barolo at $33, Il Borro at $38) are pricey but at least give you a taste of something serious without committing to a full bottle.
The Bottom Line
L'Aperitivo is the best wine argument for eating at Eataly Las Vegas: an all-Italian, all-by-the-glass list with genuine depth at the entry level and a few serious bottles for when the mood shifts. Markup is fair by Strip standards, the selection has a point of view, and the $15 Vermentino alone justifies a stop. If you're in the building and want a glass of wine that actually reflects where it came from, pull up a seat.

DJT is a fine place to eat a filet mignon or a well-executed lamb dish in a comfortable room. But if wine is the reason you're sitting down, this isn't the stop. The list appears to serve the hotel, not the guest — and in Las Vegas, where genuinely great wine programs are closer than you think, that's a hard sell.
