Walking into a wine bar attached to a sushi spot in downtown Georgetown, Texas isn't something you expect to work β and yet here we are. The list is compact and clearly curated around what actually goes with raw fish and Asian flavors, which already puts it ahead of most casual bistros that just throw a Cab on the menu and call it a day. It's not deep, but it's pointed.
Roughly 25β40 labels, leaning California and Washington, with a clear editorial eye toward lighter, food-friendly styles. Chateau Ste. Michelle Riesling, Miraval RosΓ©, and Joel Gott Sauvignon Blanc signal that someone thought about what actually works with sushi rather than defaulting to big, tannic reds. That said, J. Lohr Seven Oaks Cab feels like a concession to the crowd that refuses to drink anything other than red wine with everything. The geographic range is narrow β don't come looking for Burgundy or Alsace β but what's here makes sense for the context.
Ten to twelve options by the glass, priced $8β$14, which is reasonable for Georgetown even if the underlying markups are doing some heavy lifting. The selection mirrors the bottle list without much deviation, so you're not getting a secret glass-pour program with exciting back-stock finds. J. Lohr Seven Oaks Cabernet Sauvignon β $40
At $40 it's the most fairly marked-up bottle on the list relative to the others, and it's a crowd-pleaser that won't embarrass anyone at the table. Not exciting, but it's the bottle where you're losing the least.

Most people at a wine bar skip right past Riesling, which is a mistake β especially here. Off-dry, high-acid, and genuinely excellent with spicy sushi rolls and anything with ginger or sesame. The retail markup stings, but this is the wine that was born for this menu.

Miraval RosΓ© CΓ΄tes de Provence + Sushi rolls
Miraval's rosΓ© is dry, bright, and carries enough fruit to hold its own against soy-forward sauces without bulldozing the fish. It's the most versatile bottle on the list for a sushi spread, and it looks good on the table too β which matters at a date-night spot.
Tuesday β Weekly half-price wine promotion on select by-the-glass and bottle options. Best night to visit if you're wine-forward β cuts the markup sting significantly.

Ichiro is a legitimate Wild Card β a wine bar that actually thought about wine in a city where that's not the default move. Come on a Tuesday, drink the Riesling with your spicy tuna roll, and don't overthink the markups.
