Wingman Metrics
Walk up to the counter at Oxbow and the wine list is almost beside the point β until you actually read it. It's short, it's California-forward, and someone clearly thought hard about what belongs next to a tray of freshly shucked Sweetwaters. This is not a list built for a lengthy wine nerd deep-dive; it's built to make oysters taste even better, and it mostly succeeds.
Thirty to fifty bottles isn't a lot, but the curation earns its keep. You've got Napa and Sonoma doing the heavy lifting, with France showing up in supporting roles β exactly what you'd want in a room that smells like the ocean. Ryme Cellars Vermentino and Jolie-Laide Trousseau Gris are the kind of picks that signal someone in the building actually cares; these aren't wines you stumble into by accident. The gaps are real β no depth in Burgundy or Loire for the classicists, nothing especially adventurous beyond California β but for a casual oyster counter, the list punches above its square footage.
Eight to fourteen options by the glass is generous for the format, and the $14β$22 range is honest for Napa. The Schramsberg Blanc de Blancs showing up as a glass pour is a genuine win β most spots of this size would never bother to crack a proper California sparkling by the glass. The house white custom label is the workhorse and probably moves most of the volume, which is fine; it's there so you can focus on the oysters.
Ryme Cellars Vermentino California β $14-$18/glass
Vermentino at a California oyster bar is exactly right β saline, citrusy, and textured enough to hold up to a grilled oyster without overpowering a raw one. Ryme does it better than almost anyone in the state, and finding it here at glass-pour prices is the move.
Jolie-Laide Trousseau Gris
Most people gloss right past anything labeled Trousseau Gris because they have no idea what it is. That's a mistake. Jolie-Laide's version is skin-contact-adjacent, slightly amber, and has a savory, textured quality that makes it genuinely interesting with shellfish. Order it before someone at the next table does.
Hog Island Oyster Co. House White
Custom-label house whites exist to be inoffensive and to move quickly, and this one delivers exactly that. Nothing wrong with it β but with Ryme Vermentino and Jolie-Laide Trousseau Gris on the same list, there's no reason to settle for the generic.
Schramsberg Blanc de Blancs Napa Valley + Fresh shucked oysters
California sparkling wine and raw oysters is not a new idea, but Schramsberg Blanc de Blancs executes it at a level that makes the clichΓ© worthwhile. The brioche and green apple notes in the wine don't compete with the brine β they frame it. Order a half-dozen Sweetwaters and a glass and try to argue otherwise.
π² The Bottom Line
Hog Island isn't a wine destination, but it's a genuinely thoughtful pour for what it is β a lively counter where the shellfish runs the show and the wine list is smart enough to get out of the way and still surprise you. Send your friends here for a glass of Schramsberg and a dozen oysters and they will not be mad at you.

TRUSS is a competent, well-staffed wine program that plays to its audience and its address β if you're here for deep cuts or value hunting, lower your expectations and enjoy the views. But if you want a reliable, properly stored Napa-focused list with real sommelier guidance and a solid glass pour selection, this is exactly what it's supposed to be.

Ad Hoc's wine list is exactly what you'd expect from a Thomas Keller casual concept: well-curated, California-centric, and priced for people who didn't blink at the reservation. It won't blow your mind, but it'll hold its own against the fried chicken.
