Wingman Metrics
A 25-35 bottle list that knows its lane and stays in it. The focus is California with smart picks from Sonoma and Napa, plus a handful of European classics. For middle Georgia, this is refreshingly dialed-in.
California dominates here, and that's not a bad thing when you're pouring Diatom Chardonnay and Girard Zinfandel. The Sonoma and Russian River selections show someone actually tasted these wines before adding them. France gets a nod with a Domaine de Saje Côtes du Rhône, and there's token Italy and Spain representation with serviceable Prosecco and Cava. The list tops out at $150 for the CdP, which feels ambitious for Macon but shows confidence. What's missing: any natural wine, orange wine, or adventurous picks that would elevate this from solid to exciting.
Five to six glass pours ranging $12-16, which is fair pricing for the quality. You've got Macrostie Chardonnay from Sonoma, Jermann Pinot Grigio from Italy, and a Central Coast rosé from One Stone Cellars. The Flama Roja Cava at $12 is your budget sparkler. Nothing rotates seasonally from what we can see, so expect the same lineup visit to visit.
Macrostie 2023 Chardonnay — $16/glass or $60/bottle
Sonoma County Chard with actual structure and acidity, not just oak butter. At $60 a bottle, this drinks well above its price point.
Jermann 2021 Pinot Grigio
Most people see Pinot Grigio and think boring. Jermann from Friuli is the exception—minerality, texture, and complexity you won't find in the grocery store stuff.
Domaine de Saje 2023 Côtes du Rhône
At $150, this is the most expensive bottle on the list and it's just not worth it. You're paying Macon markup on a wine that doesn't justify the price tag.
Raeburn 2023 Chardonnay + Any seafood or chicken dish on the menu
Russian River Chardonnay has the weight and oak integration to stand up to richer preparations without overwhelming delicate proteins.

Dovetail keeps it simple and does it well. You're not going to find cutting-edge bottles or steal pricing, but you'll drink California wines that actually taste good at markups that won't make you wince. A solid neighborhood spot.

Whitehall Tavern isn't trying to be a wine destination, and that's perfectly fine. The markups are honest, the selection is predictable but competent, and nobody's going to pretend this is anything more than solid tavern drinking. If you're in Macon and want wine with dinner without getting gouged, this is your spot.
