Wingman Metrics
Fourteen bottles, all by the glass — Darkroom isn't trying to be a cellar-deep temple to wine, and that's exactly why it works. The list reads like someone with actual taste curated it over a long weekend, not a committee trying to please everyone. You're not getting a Napa Cab-heavy snoozefest here; you're getting a Madiran from Southwest France and a Priorat Blanc sitting next to a Slovenian Pinot Noir.
For a 14-label list, the geographic ambition here is genuinely impressive — Spain, Burgundy, Alsace, the Loire, the Central Coast, and Slovenia all show up. The whites lead with confidence: a Koff & Steinmetz Grand Cru Riesling from the Pfersigberg, a Raoul Gautherin Chablis, and a Mas Doix Priorat Blanc signal that whoever built this list knows their way around a map. Reds are tighter but deliberate — the Tenute Sella Nebbiolo from Coste della Sesia is a nod to Alto Piemonte before it was fashionable, and the Vignobles Marie Maria Madiran is the kind of Tannat-driven pour that has no business being this interesting at $65. The one gap: no skin-contact or orange wine despite the category being listed, which feels like a tease.
Everything on the list is available by the glass, which is either a bold move or a logistical headache depending on turnover — at 14 selections ranging from $16 to $25 a glass, the ask is fair enough that you can afford to experiment. The Jaume Giro i Giro Cava Rosat Reserva as a sparkling option by the glass alone earns goodwill; too many wine bars default to Prosecco and call it a day. No noted rotation program, so what you see is what you get until the menu refreshes.
Vignobles Marie Maria Madiran 'Novel' 2020 — $65
Madiran at this price point is already rare to find; on a restaurant list it's practically an anomaly. Tannat-based wines from Southwest France need time and this one has it — at $65 it's the most interesting red on the list at the lowest entry price.
Koff & Steinmetz Riesling Grand Cru 'Pfersigberg' 2016
A 2016 Alsatian Grand Cru Riesling on a 14-bottle list in Santa Ana is genuinely unexpected. Most people will scroll past it, which means more for you — this is a wine with age on it, real site expression, and the kind of complexity that usually lives on much longer lists at much higher prices.
Conn Creek Sauvignon Blanc 2024
At $82, Conn Creek Sauvignon Blanc is the one label that feels like it wandered in from a hotel banquet list. It's fine wine, but it's surrounded by far more interesting choices at similar or lower prices — the $80 Mas Doix Priorat Blanc makes this one look lazy by comparison.
Tenute Sella Coste della Sesia Nebbiolo 2019 + Charcuterie board
Alto Piemonte Nebbiolo has the acid and tannin structure to cut through cured meat and aged cheese without steamrolling them — it's a lighter-framed Nebbiolo compared to Barolo, which makes it the right call for grazing rather than a big plate.
The Bottom Line
Darkroom is punching well above its weight class for a 14-bottle program — the selection is sharp, the pricing is honest, and the list has a clear point of view. Send a wine-curious friend here and tell them to ask for the Riesling.
Santa Ana · Santa Ana · Italian Fine Dining
An Italian fine dining room with an Enoteca in its name serving five all-California wines and one glass pour is a contradiction we can't talk our way around. Skip the wine, order a Negroni, and hope the food earns the room's ambitions.

Wine Experience Cafe is the kind of place that earns its name in a neighborhood where most restaurants don't try at all. It's not a destination list, but it's an honest one — and in a shopping center in Aurora, that's worth celebrating.
