Instead, you find 38 labels with a genuine point of view — whites leaning adventurous, regions spanning New Zealand to the Loire, and a name-drop or two that would raise eyebrows at a much pricier restaurant. This list is trying, and in West Texas, that alone counts for something.

The list skews heavily white and bubbly, which actually plays to its strengths — there's a thoughtful Sauvignon Blanc section spanning Marlborough (Yealands), Loire (Jean-Pascal Aubron), and Washington State (DeLille Cellars), giving curious drinkers a genuine around-the-world snapshot of one grape. The Chardonnay lineup runs from the approachable Sterling entry point up through Etude, which is a legitimate Carneros producer that earns its place. The red side is underdeveloped — Alberti 154 Malbec and Parcel 41 Merlot are fine, but two reds on a 38-bottle list suggests the kitchen probably leans pork-and-small-plates anyway. The real wildcard here is the Field Recordings Skins White, a skin-contact wine that has zero business being on a gastropub list in Abilene — and we mean that as a compliment.
