Wingman Metrics
The wine list at Bourbon Prime reads exactly how you'd expect a Marriott steakhouse in West Virginia to read — heavy on Napa Cabs, light on adventure. It's competent, it's polished, and it will absolutely get the job done if you're here for a ribeye and a big red. Just don't come looking for anything that surprises you.
The list leans hard on California, with Napa and Sonoma doing the heavy lifting and Washington State making a cameo. You'll find the usual suspects — Jordan, Silver Oak, Caymus, Meiomi — all reliably good wines that happen to also be on every steakhouse list from here to Dallas. There's no real Old World presence to speak of, no natural wine detour, and no deep dive into underrepresented regions. What's here is curated for broad appeal and high familiarity, which keeps everyone happy but leaves curious drinkers wanting more.
The by-the-glass program runs 10-20 options at $12–$20 a pour, which is a reasonable spread for an upscale steakhouse setting. Expect the pours to mirror the bottle list — Meiomi Pinot Noir and Kim Crawford Sauvignon Blanc almost certainly anchor the lighter end. Rotation appears minimal; this is a set-it-and-forget-it program rather than a chef-driven glass selection that changes with the seasons.
Jordan Cabernet Sauvignon — $45
If you can find it at or near the lower end of their bottle range, Jordan is consistently one of the most drinkable Alexander Valley Cabs on the market — balanced, food-friendly, and not trying too hard. It's the reliable choice that won't embarrass you or your wallet.
Kim Crawford Sauvignon Blanc
Easy to dismiss as a grocery store pick, but if you're ordering shrimp and grits at a steakhouse, this is the move. Bright acidity, clean citrus, and it cuts through rich sauces without demanding your full attention. Underrated for its context here.
Caymus Cabernet Sauvignon
Caymus is a fine wine, but at a hotel steakhouse markup it's almost certainly priced at 3-4x retail. You're paying for the label recognition, not discovery. The Jordan does the same job at likely a friendlier price point.
Silver Oak Cabernet Sauvignon + Prime Ribeye
Silver Oak's approachable tannin structure and dark fruit profile are basically engineered for a well-marbled ribeye. The wine has enough weight to stand up to the fat without overwhelming the beef — it's a classic combination that earns its cliché status.
✔️ The Bottom Line
Bourbon Prime is where you go when you want a reliable Napa Cab with your steak and you're not in the mood to think too hard about it. The wine list won't inspire you, but it won't let you down either — which is exactly what a downtown hotel steakhouse should deliver.

Oliverio's isn't a wine destination — it's a neighborhood Italian spot with honest prices and a list that covers the bases without any fuss. Send your friends here for dinner, not for the wine program, but at least they won't get gouged.

This is a wine list built for compliance, not curiosity — it exists so servers can say yes when you ask for wine. If you're eating at Red Lobster Morgantown, order the Henry of Pelham Riesling or the Cava, enjoy your biscuits, and don't think too hard about what could have been.

Muriale's isn't a wine destination, but it's an honest one — fair prices, familiar pours, and a list that knows what it is. Send your friend here for dinner, not for a wine education.

Cafe Oliverio is a genuinely fun spot — live music, good food, lively crowd — and the wine list is serviceable without being memorable. Send your friends here for a great Italian dinner; just manage expectations on the wine front and steer them toward the Austin Hope.

Fusion Restaurant has the setting to be a genuine dining destination, but the wine list is purely transactional — safe names, steep markups, zero curation. Come for the lake, order a cocktail, and save the bottle for somewhere that cares.

Hill & Hollow puts real effort into its kitchen, and the wine list simply doesn't match. Until the beverage program gets the same attention as the farm sourcing, stick to one glass and move on.
