The list is short at 15 labels, but every bottle is house-made, and the pricing sits at a level that doesn't feel like a tourist tax. Waltz leans heavily on Pennsylvania-grown fruit across a range that covers dry whites, rosé, off-dry blends, and a few serious red attempts. The white side is the most interesting: a Semillon ($34), a Sauvignon Blanc ($26), two Chardonnays at different tiers ($27 and $38), and a Blanc de Noir ($38) suggest someone here is paying attention to what grows well in this climate. At $45, this is the ceiling of the list, and Pennsylvania Cabernet Sauvignon faces an uphill battle against what you'd get from Napa or even the Finger Lakes at the same price. The ambition is noted, but your dollar stretches further elsewhere on this menu.
Waltz Vineyards Stiegel Rose 2024 + Charcuterie board
A dry rosé at $22 is the obvious call for a grazing board — it bridges salty cured meats and soft cheeses without demanding anything from you. Low-commitment, high-return.
