Walk into Vaquero Bar expecting cocktails and you leave surprised by the wine list. Ten bottles, all Central Coast, all chosen with obvious intention — this is not an afterthought program. For a late-night bar in a tourist town built around Danish architecture, the curatorial restraint here is genuinely impressive.
Every single pour on this list comes from the Santa Barbara County orbit, and that focus pays off. You've got Stolpman representing Ballard Canyon twice — a Grenache Rosé and a Syrah — plus Whitcraft, Presqu'ile, and Grassini rounding out the local all-star lineup. The wildcard slot goes to a Weingut Barbara Ohlzelt Grüner Veltliner from Austria's Kamptal, which feels like someone on staff actually has opinions. The list stops at ten bottles, which is fine for a bar, but there's no red depth beyond Syrah and a Zinfandel — Cab drinkers land at the $100 bottle ceiling fast.
All ten bottles pour by the glass, which is the right call for a bar format. Prices run $14 to $25 a glass, with most clustering in the $16–$18 range. There's no rotating program evident here — what you see is what you get — but the core selections are strong enough that you're unlikely to feel shortchanged on a given night.
Stolpman Vineyards Grenache Rosé Ballard Canyon 2024 — $16/glass
Stolpman Grenache Rosé is legitimately good wine from one of Santa Barbara's top producers. At $16 in a bar setting, you're paying bar-wine prices for something that's actually worth ordering. Easy pick.
Stolpman Vineyards Pinot Gris-Gewurztraminer Orange Wine Orcutt 2023
Nobody at a cocktail bar in Solvang is ordering orange wine, which is exactly why you should. Stolpman knows what they're doing with this blend, and it's the most interesting thing on a list that otherwise plays it pretty safe.
Grimm's Bluff Cabernet Sauvignon Cliff Hanger Happy Canyon 2019
At $25 a glass and $100 a bottle, this is the most expensive pour on the list. Without retail pricing data to benchmark it, that top-shelf ask in a casual bar setting is a lot to swallow. Order the Syrah instead.
Weingut Barbara Ohlzelt Grüner Veltliner Kamptal Austria 2023 + Bar snacks / shared plates
Grüner is one of the great snacking wines on earth — high acid, a little spice, cuts through anything salty or fried. It's the ideal bar companion and the one bottle on this list that travels furthest from California, making it the most conversation-worthy pour on the menu.
The Bottom Line
Vaquero Bar doesn't lead with wine, but it should — this is one of the sharpest small lists in the Santa Ynez Valley. Markup runs steep on the high end, but the local producer curation and that rogue Austrian white earn it a look every time you're in Solvang.

The Grill at the Ranch Course isn't a wine destination, but it's a smart, locally-honest list that respects its surroundings more than most golf course restaurants bother to. If you're already at Alisal Ranch, lean into the Santa Ynez producers and you'll drink well.

Trattoria Grappolo isn't trying to be a destination wine bar, and it doesn't need to be — it's a warm, well-run trattoria with a list that respects its address and feeds the food well. If you're in the Santa Ynez Valley and want local wines with good pasta, this is exactly the right call.

Full of Life Flatbread is the best argument for pulling off the freeway in Los Alamos — the food and the wine list are both punching way above what a casual flatbread spot has any business delivering. If you're driving through wine country and skipping this because it doesn't look like a tasting room, that's on you.
