Walk into The Noble Fox and the beer story is front and center — house-crafted brews, a lively pub atmosphere in a beloved Ashland space. The wine list, though, reads like an afterthought someone assembled from a distributor's mid-tier catalog. It's not offensive, but it's not trying very hard either.
What we find here is a tight cluster of crowd-pleasing rosés and sparkling wines — heavy on bubbles and pink pours, light on anything with real depth. Spain, Italy, Chile, France, and Provence all show up, but these are entry-level, volume-production bottles from names like Bolla, Pasqua, and Codorniu. There's no red wine standout, no Oregon Pinot to anchor the list in its own backyard, which feels like a real missed opportunity given Ashland sits in Southern Oregon wine country. The list isn't curated so much as assembled.
The by-the-glass program appears to lean heavily into the rosé and sparkling category — which at least shows a personality, even if that personality is 'summer patio at a chain restaurant.' Pricing details weren't available during our visit, but the bottle-tier producers here suggest glass pours are likely marked up aggressively relative to what's in the glass. Rotation seems minimal at best.
Tarima Rosado Monastrell, Côtes De Thau, Languedoc, France — null
The Languedoc Monastrell rosé is the most interesting bottle on this list — Monastrell-based rosés from this region tend to have more grip and character than the typical Provence imitation. If the price holds close to retail, it's the pick that actually rewards your palate.
Collet Brut Rosé NV
Collet is a Champagne cooperative with serious roots — it often flies under the radar compared to the big négociant houses. If they're pouring it at a reasonable price in a brewpub context, that's a genuine find worth ordering before someone corrects the list.
Prosecco Superiore, Bolla, Italy
Bolla is a name that belongs in a supermarket aisle, not on a restaurant list where you're paying a markup. There are far better Proseccos at this price tier — don't let the 'Superiore' designation on the label do the heavy lifting here.
11 Minutes Rosé, Côtes De Provence, Henri Gaillard, France + Salmon
A dry Provence rosé and salmon is practically a reflex at this point, but it works — the wine's bright acidity cuts through the fat without overwhelming the fish. It's the most reliable call on a list that doesn't give you many options.

The Noble Fox is a brewpub, and you should drink like it — order a house beer and enjoy the atmosphere. If you're committed to wine, stick to the Collet or the Provence rosé and set your expectations accordingly.
