A nearly 100-bottle list at a hotel restaurant on the Galveston Seawall is not what we expected, and neither is finding Domaine Huet and Lustau Oloroso Sherry sitting alongside Whispering Angel. The list has genuine ambition — someone with actual taste put this together. Whether the room knows it or not is another question.
The presence of smaller classical producers and a nod toward natural wine gives The Fancy a list that punches well above its coastal-tourist weight class. Caymus Cabernet and The Prisoner are here for the crowd-pleasers, sure, but Domaine Huet's 'Clos du Bourg' Chenin Blanc Moelleux and Lustau's 'Don Nuño' Oloroso signal that whoever built this list has range. The regional focus leans old-world with classical bones, which is a bold call in a market that mostly wants rosé and big California reds. The gaps are real — the list isn't deep enough to satisfy a serious collector — but it's far more interesting than the zip code suggests.
The by-the-glass program is above average in count, which is one of the stronger signals on a list like this — it means more people get to explore rather than commit to a bottle of something safe. Kim Crawford Sauvignon Blanc and Whispering Angel will move the most volume, which is fine, but we'd push the staff to steer guests toward whatever's more interesting on the pour list. Rotation frequency is unclear, which is the one thing that could make or break this program.
Lustau 'Don Nuño' Oloroso Sherry — $11
At $11 a glass for a legitimately complex, nutty, aged Oloroso from one of Jerez's best houses, this is a steal by any measure. Most people won't order it, which means more for us.

Sherry gets passed over constantly, especially in American coastal restaurants. This one from Lustau is the real deal — rich, oxidative, and endlessly complex. Order it as an aperitif or with something salty and fatty. You will not regret it.
Domaine Huet 'Clos du Bourg' Chenin Blanc Moelleux Vouvray 2018
We love Huet. We love this wine. But at $150 on a list where retail sits around $80, the markup crosses a line. If you know this bottle, you know what you're paying extra for. If you don't, there are better ways to spend $150 here.
Lustau 'Don Nuño' Oloroso Sherry + Oysters
The Gulf Coast is oyster country, and a dry, saline Oloroso cuts right through the brine and richness of a fresh oyster in a way that Sauvignon Blanc only dreams about. This is the pairing the menu doesn't know it's built for.

The Fancy is the most interesting wine list on the Galveston Seawall by a wide margin — not a high bar, but they're genuinely earning it. Come for the Sherry, be cautious with the Huet, and appreciate that someone here is trying.

The San Luis Resort is where you drink wine because you're already there, not because you sought it out. The weekday happy hour discount is genuinely useful and bumps this above a lazy list — but come for the Gulf view, not the cellar.

The Steakhouse is exactly what it says on the label — a reliable, California-forward wine program in an upscale waterfront setting that's been doing this long enough to earn its Wine Spectator credential.
