For a 20-bottle list, this one punches well above its weight class. There's real geographic curiosity here — Kermit Lynch Côtes du Rhône sits next to a Hugl Grüner Veltliner, a Lost Moschofilero from Greece, and a Redentore Refosco from Friuli, which is not something you typically find between a golf course dining guide and a Yelp page in St. George, Utah. California and Oregon anchor the familiar end with Frank Family Chardonnay, Seghesio Zinfandel, and Evolution Pinot Noir. The gaps are real — no Spanish wines, no German Riesling outside Oregon, and the Italian section leans obscure without much connective tissue — but the overall curation feels intentional, not accidental.

Lost Moschofilero
Most tables at a contemporary American bistro are going to walk right past a Greek white and order the Sauvignon Blanc. Don't. Moschofilero is floral, crisp, and lower in alcohol than most whites on this list — it's the kind of bottle that makes people say 'what is this?' in the best possible way.
Veuve Clicquot Brut Yellow Label

Redentore Refosco + Market fish entrée

It bridges the gap between white-wine instinct and red-wine confidence, and in a scratch kitchen context it rewards the curious diner.

Rylu's is the kind of wine list that only exists because someone in that kitchen actually cares — a Moschofilero and a Kermit Lynch Rhône don't end up in Southern Utah by accident. It's not deep, it's not flashy, but for a reservation-only bistro in St. George, it earns a genuine recommendation.
