The sheer scale of the bottle selection β described as wines from around the world β is what separates Red Fish from every other fish house on Hilton Head. The caveat is that what we know specifically about the curated producers leans commercial: Duckhorn, Caymus, J. Lohr are fine wines but they're also wines you can find at your local Total Wine. The promise of 1,300 labels suggests there's real depth buried in there, but without a published list, you're partially flying blind until you're standing in the shop. A sommelier on staff is the safety net here β use them.
Somewhere between 15 and 25 pours by the glass, which is a solid range for a coastal seafood restaurant. The selection likely skews toward approachable whites and a few crowd-pleasing reds, which tracks for the Lowcountry dining crowd. Duckhorn is better known for its Merlot and Cabernet, so the Sauvignon Blanc gets overlooked. It's a cleaner, more textured pour than the Napa reputation might suggest β and next to a plate of Lowcountry shrimp and grits, it quietly earns its keep.
Caymus Vineyards Cabernet Sauvignon
Caymus is ubiquitous on restaurant lists for a reason β people recognize the name and order it on autopilot. It's a rich, jammy Cab that leans sweet and heavy, and at the price it commands, you can do better. At a seafood-forward restaurant especially, there are smarter bottles to spend that money on.
Duckhorn Vineyards Sauvignon Blanc + Red Fish topped with crab and shrimp
The signature dish is rich with shellfish and butter, and you want a white with enough acidity to cut through that richness without overpowering the delicate fish. Duckhorn's Sauvignon Blanc has the structure to handle the crab and shrimp while keeping things bright.
