There's nothing surprising here, but it's polished and deliberate. You know exactly what you're walking into, and for a special-occasion steak dinner in Carmel, that comfort might be the whole point.
California dominates, as expected, with Napa Cabs and Carneros Chardonnays carrying the bulk of the bottle list. There are some gestures toward New Zealand and Italy — Auntsfield Sauvignon Blanc and Borghi ad Est Pinot Grigio give the white side a little breathing room — but the overall list doesn't stray far from what a suburban Indiana crowd expects to see. At $88 it's not cheap, but Las Alturas is one of Belle Glos's better vineyard designates — darker fruit, more structure than the crowd-pleasing Clark & Telephone bottling. Most people here are ordering Cab, which means this bottle gets overlooked. Don't let it.
Caymus Vineyards Cabernet Sauvignon Napa Valley 2021
At $195 against a $90 retail price, you're paying a 117% markup for a wine that, frankly, is produced in enormous quantities and available everywhere. It's the most ordered bottle at steakhouses across America — which is exactly why the restaurant doesn't need to price it fairly. Pass.
Silver Oak Cabernet Sauvignon Alexander Valley 2019 + Eye of Ribeye
Alexander Valley Silver Oak runs a little softer and more approachable than its Napa sibling — the cedary, vanilla-forward profile works with the fat and char of a prime ribeye without the tannin aggression that can fight a well-marbled cut. At $165 it's not a steal, but it's the most coherent pairing on the list for the restaurant's signature steak.
Friday & Saturday — Prime 47 Carmel runs recurring half-price select bottle promotions on Fridays and Saturdays, though the specific bottles included and seasonal availability can change. Confirm with the restaurant before you go — but if the deal is running, this is when the steep markups start to look a lot more reasonable.

Aberdeen Social House is doing more with its wine list than the address or the concept would lead you to believe, and Rootstock's global curation keeps it from feeling like an afterthought. Not a destination wine program yet, but a genuinely solid call for the north side of Indy.
