The list leans hard into the California-France-Italy triumvirate, which suits a steakhouse just fine — and they execute it with real depth rather than the usual lazy hits. Everyone at this table is going to reach for Caymus or Silver Oak out of habit. Don't. Chateau Montelena — the Napa legend that won the 1976 Judgment of Paris — tends to get overlooked at steakhouses because it doesn't have the same brand-name muscle. It's more structured, more age-worthy, and genuinely more interesting. The people who know, order this.
Caymus Vineyards Cabernet Sauvignon 2022
At $175, you're paying a significant premium for a bottle that retails widely around $80-90 and has become so ubiquitous it's practically a condiment. Caymus is fine — it's just that your money travels farther almost anywhere else on this list. The markup here is doing the heavy lifting, not the wine.
Sassicaia 2021 + Filet Mignon
Sassicaia brings Cabernet Franc-driven structure with that unmistakable Tuscan grip — earthy, firm, built for red meat. Against a filet's clean, buttery texture, it doesn't overpower; it frames. This is the kind of pairing that makes you understand why Sassicaia costs what it costs.
