Firebirds is a chain steakhouse that takes its wine program more seriously than it has to. The list is organized lightest-to-fullest body, includes certified organic, biodynamic, and sustainable selections, and features recognizable names like Stag's Leap Artemis, Sonoma-Cutrer, and Louis M. Martini alongside the expected crowd-pleasers. It is not destination dining but it is not phoning it in either.
The wine list hits the familiar-but-respectable sweet spot. Caymus, Belle Glos, and Sonoma-Cutrer provide the name recognition that steakhouse regulars expect. But look deeper and you find B.R. Cohn Pinot Noir, St. Supery Sauvignon Blanc, and J. Lohr Seven Oaks — producers that over-deliver at their price points. The limited allocation section carries bottles north of $100 including what appears to be Caymus Cabernet at around $130. For a chain, that is genuine depth.
The by-the-glass program covers the major varietals at reasonable prices. Happy Hour in the FIREBAR runs 3 to 7 PM Monday through Friday with select glasses of wine at $6 — which is aggressive pricing for a restaurant of this quality. The Sonoma Coast Chardonnay (likely Sonoma-Cutrer) appears among the glass pours, giving you access to a quality producer without the bottle commitment.

Stag's Leap Wine Cellars Artemis Cabernet Sauvignon
The Artemis is Stag's Leap's entry-level Cab and it over-delivers every vintage. Finding it on a chain steakhouse list is a pleasant surprise — order it before the table defaults to the Caymus.
Caymus Cabernet Sauvignon by the Bottle
At approximately $130 on a chain steakhouse list, you are paying a significant premium for a name that has become more brand than bargain. The Artemis and J. Lohr deliver better value-to-experience ratios.
Louis M. Martini Cabernet Sauvignon + Wood-Grilled Filet Mignon
The Martini Cab is a workhorse Napa producer that matches the wood-fired char and smoky flavor profile that defines Firebirds' cooking style. Reliable pairing, reliable price.
